Help! Summer recipes needed for BBQ.?

I need a quick and easy "summer" recipe for a get together my friends are hosting. (a house warming party) They asked that we bring a dish and the recipe (recipes will be added to their new home's cookbook as a house warming gift). And because it is a BBQ i think many people will bring "grilling" recipes i would like to bring something that won't need to take up space on the grill that maybe already over flowing with meat. Any ideas for a side dish or a sweet, perhaps even a mixed drink or punch?

Here are some suggestions.

Watergate Salad
1 lg can crushed pineapple
1 box pistachio instant pudding
1 c. mini marshmallows
1/2 c. coconut
1 lg carton Cool whip
Mix pineapple and pudding mix together; then add marshmallows,
coconut and Cool whip. Mix and Chill.
7-LAYERS BARS......
These are YUMMY!!!!
1/2 c. butter or margarine
1 c. graham cracker crumbs
6 oz. chocolate chips
6 oz. butterscotch chips
1 1/3 c. flaked coconut
1/2 c walnuts
1 can sweetened condensed milk
Melt butter in 13x9' pan. Sprinke crumbs evenly over butter. Layer with chocolate chips, butterscotch chips, coconut and walnuts. Pour milk over all. Bake @ 350' for 30 minutes. Cool. Cut into bars.

Or you can try different variations of Sherbet Punch. All you need is sherbet, soda and a punch bowl.

Orange Sherbet Punch
2 liter of orange soda
orange sherbet
Add to punch bowl and serve

Lime Sherbet Punch
2 liter sprite or 7-up or even Ginger Ale
Lime Sherbet

Raspberry Punch
2 liter Strawberry soda
Raspberry Sherbet

Bring a side... potato salad...with a twist
any potato salad recipe and add... PUT GLOVES ON FIRST...Habanero pepper...clean seeds and stem slice very thin and add to potato salad...this is where it gets fun not too much at a time..you get to taste test... take a bite and wait a sec or two and let it set in...if it gets too hot add more mayonnaise. Potato Bake never goes astray at a barbeque.

I've never seen potato bake leftovers at any event I've ever been to! There are lots of different variations you can make to it, such as adding bacon, onion, pumpkin etc.

Even if somebody else makes one, 2 rarely taste the same and they are still, often the first food to disappear!

I have two really delicious punch recipes. I didn't know if you wanted it with alcohol or without so thats why there are two! I highly recommend either!

Non-alcoholic party punch
INGREDIENTS
3 (3 ounce) packages fruit flavored gelatin mix
4 cups white sugar
13 cups boiling water
2 (46 fluid ounce) cans pineapple juice
1 (16 ounce) bottle lemon juice concentrate
2 (2 liter) bottles ginger ale, chilled

DIRECTIONS
In a large bowl, combine gelatin and sugar. Stir in boiling water until mixture is dissolved. Stir in pineapple juice and lemon juice concentrate. Divide into 2 containers, and freeze until solid.
To serve, place gelatin mixture in punch bowl, and chop into pieces. Pour in ginger ale. (Makes 40 servings)


Punch with vodka
INGREDIENTS
1 (16 ounce) can frozen pineapple juice concentrate
1 (12 fluid ounce) can frozen orange juice concentrate
12 fluid ounces vodka
2 (2 liter) bottles lemon-lime flavored carbonated beverage, chilled
1 (4 ounce) jar maraschino cherries
4 oranges, sliced into rounds
2 trays ice cubes
DIRECTIONS
In a punch bowl, combine pineapple juice concentrate, orange juice concentrate and vodka. Pour in lemon-lime soda. Float cherries and orange slices on top. Add ice before serving.


and lastly...for a side dish I thought I'd give you my favorite potato salad recipe...this is DELICIOUS!

INGREDIENTS
4 potatoes
4 eggs
1/2 stalk celery, chopped
1/4 cup sweet relish
1 clove garlic, minced
2 tablespoons prepared mustard
1/2 cup mayonnaise
salt and pepper to taste
DIRECTIONS
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain and chop.
Place eggs in a saucepan and cover with cold water. Bring water to a boil; cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water; peel and chop.
In a large bowl, combine the potatoes, eggs, celery, sweet relish, garlic, mustard, mayonnaise and salt and pepper. Gently mix together. (can be served warm or cold, keep in fridge until serving if you are going to serve it cold)(this recipe makes 4 servings)

Pink Lemonade Pie
1 (14 ounce) can sweetened condensed milk
1 (6 ounce) can frozen pink lemonade concentrate, thawed
1 (8 ounce) container frozen whipped topping, thawed
2 (8 inch) prepared graham cracker crusts

In a large bowl, mix together sweetened condensed milk and lemonade concentrate. Fold in whipped topping. Pour into pie crusts. Refrigerate until completely chilled.
