may i have a list of herbs & spices as my brother will be doing hotel management in 3 months & he needs to do some preparations starting from now on, thanks

As for herbs, you may use some fresh and some dried. fresh recommendations are;
parsley, Italian Parsley, Cilantro, Thyme, Lemon grass, Saffron, Rosemary, Dill, Chive, Chervil, Bay leafs, Basil, Oregano, Mint, Tarragon, and Sage.
These are also available dried but good food uses fresh ingredients.
Then you have granulated onion,
granulated garlic, whole black peppercorn,
green peppercorn, cracked black pepper,
kosher salt, salt, celery salt, white pepper, cayenne, chili powder, cumin, fajita seasoning,
cajun blackfish seasoning, poultry seasoning, sugar, crushed red chili pepper,
dry mustard powder, BBQ Seasoning,
Taco seasoning,
allspice, paprika,cinnamon, cloves, fennel, nutmeg, sesame seeds, turmeric, curry powder,
chinese five spice, star anise, coriander,
capers, juniper berries, Herbs of providence.
Also have in mind that it all depends upon the menus of whats herbs and spices are needed.

it really has to do with on the type of food they intend to serve. I'd say:
for Mediterranean food :
flat leaf parsley
basil
rosemary
sage
thyme
chives
chilly
for Asian food :
red and green capsicum
lemon grass
kaffir lemon leaves
lime
coriander
