Original Anchor Bar Recipe

Here is the original recipe created by Ms. Teresa Bellissimo, owner of
the Anchor Bar and Restaurant, in Buffalo, NY. It is taken from
Totally Hot! The Ultimate Hot Pepper Cookbook.

4 to 5 Lbs Chicken wings
Freshly ground black pepper
Salt (if desired)
4 C Vegetable Oil
4 Tbs butter or margarine (1/2 stick)
5 Tbs Louisiana-brand hot sauce or Tabasco sauce
1 Tbs white wine vinegar

1. Chop off the tip of each chicken wing, and discard it. Chop the wing
in half (cutting at the joint) to make 2 pieces. Grind on fresh black
pepper and sprinkle with salt if desired.

2. Heat the oil over high heat in a deep skillet, Dutch oven, or deep-fat
fryer until it starts to pop and sizzle (around 400 degrees F). Add
half the chicken wings and cook until they're golden and crisp,
stirring or shaking occasionally. When done, remove them to drain on
paper towels and cook the remaining wings.

3. Melt the butter or margarine over medium heat in a heavy saucepan, add
the hot sauce and the 1 tablespoon of vinegar. Stir well and remove from
the flame immediately.

4. Place the chicken on a warm serving platter, pour the sauce on top, and
serve


note: This is the original recipie from the inventors of Buffalo Wings, but personally I prefer to use Frank's Red Hot sauce in place of the Tobasco or Louisiana Hot Sauce.

There are tons of ways to do it. However,all you need is a good hot sauce, like Texas Pete, or if you prefer something mild, there's all kinds to choose from. I put the fresh chicken wings in a bag, pour the sauce into the bag, give them a good shake so they are fully coated and put them in the oven on 400 degrees. Bake them for about 12min, on each side, and mmmmmmmmm yummy!! As for the celery and bleu cheese, you can find those at any grocery store. I prefer RANCH with my wings,preferably hidden valley ranch

BEST BUFFALO WINGS (HOT WINGS)

You want to cook the chicken first. Bake the chicken in the oven at 375 degree's. When the chicken is almost done, begin the sauce1/2 cup of Louisiana hot sauce
2 teaspoons sugar in a large pot, place to allow the chicken to be submerged.
Add the chicken into the pot and heat on a low heat for several hours. A small amount of bubbling should be noticable. How long will decide how tender the chicken comes out.

When your ready to eat, spoon the chicken out, noticing the tenderness of the meat and how it may separate from the bone. Too long may make all of the chicken fall apart though

I use Ranch or blue cheese for dipping.

I haven't met anyone who doesn't like it yet.

BUFFALO CHICKEN WINGS

2 tbsp. water
2 tsp. hot pepper sauce
1 1/2 lbs. chicken wings, separated at joints, tips discarded
1 env. Shake 'n Bake seasoning & coating mixture, original barbecue recipe for chicken

Combine water and pepper sauce in bowl. Add chicken wings and turn to moisten, let stand 30 minutes. Shake off excess liquid. Coat as directed on package. Place in ungreased baking pan. Bake at 350 degrees for 30 minutes or until thoroughly cooked.

America has also introduced new sauces to go on the chicken wings since they were made famous in Buffalo NY. Some of these new sauces are:
Honey BBQ Sauce: Mix 3 parts BBQ sauce with one part Honey, add freshly chopped parsley and toss in the chicken wings.
Butter Garlic Sauce: Depending on the amount of wings you have, saute ' 2 sticks of butter with 2 or 3 cloves of minced garlic along with freshly chopped parsley just for about 3 minutes, toss in wings.
Terriyaki Garlic: Saute' 2-3 cloves of minced garlic in 1 tbsp of olive oil, add terriyaki sauce and freshly chopped parsley, toss in wings and mix.
