Spicy spaghetti with olive oil, spicy peppers,garlic..?

my husband loves this dish in an italian resturant. im just not 100% sure how to make it. does any one know what im talking about and how to make it. it doesnt contain tomatoes.

Spaghetti Aglio e Olio

The name is simple ("Spaghetti with Garlic and Oil"), the preparation a breeze and the results are simply magnificent. In this traditional and timeless Italian production, you toss hot pasta with lots of garlic sautéed in extra-virgin olive oil, seasoned with a little crushed red pepper and finished with grated pecorino romano cheese. Serve with a mixed salad, crusty bread and your favorite light red wine.

* 1 lb spaghetti (or your favorite long pasta)
* 5 TB extra-virgin olive oil
* 8 large garlic cloves, minced
* 1/4 tsp crushed red pepper (optional)
* 1/2 cup chopped Italian parsley leaves
* 1/2 cup grated pecorino romano cheese
* sea salt, to taste
* ground pepper, to taste

Bring a large pot of salted water to a boil; add spaghetti and cook until al dente. Reserve 1/3 cup of the pasta cooking water.

Meanwhile, combine the olive oil, minced garlic and crushed red pepper in a pot or pan large enough to hold one pound of cooked pasta and slowly sauté together over medium heat until the garlic begins to lightly brown (approximately 5 minutes). Be very careful not to burn the garlic as it will turn bitter. If the garlic has browned before the pasta has finished cooking, remove it from the heat and keep it warm.

When the pasta is finished, reheat the oil, if necessary, drain the pasta and add it to the oil with the reserved pasta water. Add most of the chopped parsley, ? the cheese, and the salt and pepper and mix well with a wooden spoon.

Transfer the pasta to a serving plate or bowl, top with the remaining parsley and pecorino romano cheese and serve immediately.

spaghetti olio agio

very simple to make...
saute garlic in a pan with olive oil..stir in hot pepper flakes and then add maybe mushrooms or some other vegetables and spiced sausage if you like
then toss in the boiled spaghetti and fry for a while...

top with some chopped parsley, oregano and parmesan cheese...

That's it.... and it's yummy !

this should be eaten with a small side salad, and garlic bread

3/4 lb spaghetti
1/2 cup virgin olive oil
1 tablespoon minced garlic
1/2 teaspoon crushed hot pepper flakes
1/4 teaspoon salt
1 cup chicken broth
1 cup sliced red/green peppers
1/4 cup chopped flat leaf parsley
2 tablespoons grated romano cheese

Cook spaghetti and drain.
Heat the olive oil in a heavy skillet along with the garlic, hot pepper flakes and salt.
When the garlic just starts to change color add the chicken broth.
Cook the broth for about 5 minutes, or until it is reduced by half.
Stir in the cooked spaghetti, parsley and cheese.
Toss the spaghetti until thoroughly coated.
Serve hot or cold.
