Can chocolate suckers be frozen for future use?

I'm making chocolate suckers for my wedding which is 2 months away, but i don't want them to turn white. Is this ok????


Answers:
You need to temper the chocolate first which will set the crystals and prevent the oils from separating. If you just melt the chocolate and pour it into the molds and freeze the suckers you will almost certainly get white spots, but go through the tempering process and you should be ok.
