i need help on how to actually make fried cabbage and baked macaroni because mine is just not working right...my macaroni gets dry..am i adding too many eggs or should i beat the eggs or just add them? what can make my macaroni moist? and make my fried cabbage have that particular taste that your grandma or mom would make... = )

Here is my favorite mac and cheese recipe. I am also including one for the crockpot.

AUNT MAE’S MAC AND CHEESE

16 oz box of macaroni
1 16 oz block of sharp cheddar cheese (slice before using)
?-1/3 cup evaporated milk
Salt to taste
Pepper to taste
1 large bag (8 oz or larger) of shredded cheese (Sharp)
1 can cheddar cheese soup
1 egg
? cup evaporated milk
? tsp Worcestershire Sauce
Paprika

Cook macaroni. Cut cheddar into slices. After you cook the macaroni, drain it. Add the cheddar cheese soup, ?-1/3 cup evaporated milk and the salt and pepper. Mix egg, Worcestershire sauce, and 3/4 cup evaporated milk; set aside. Layer macaroni, egg/milk/Worcestershire sauce mixture, cheese slices, and shredded cheese in a baking dish that has been sprayed with Pam. Repeat two more times. Sprinkle Paprika on the top. Bake at 400 for 20 min.

You can either put this into a large dish or make two smaller dishes and freeze one to cook later. I divided mine. The first half I put in a round 1? qt white Corning Ware dish. It was full to the top. The second half, I froze in a foil pan to bake another day.

Macaroni and Cheese

1 16 oz package macaroni cooked al dente and drained
2 13 oz cans evaporated milk
1 1/2 cup milk
1 tsp. salt
6 cups shredded cheese (Sharp cheddar, Colby, Longhorn, etc)

Mix ingredients. Pour into lightly greased crock pot. Cover and cook on high for 3-4 hours.

Here are some tried and true fried cabbage recipes.

Fried Cabbage
6 C finely shredded cabbage
5 T bacon drippings
1/2 t salt
1 1/2 T sugar
1/2 C milk
2-3 T vinegar

Melt drippings and add cabbage. Fry slowly for 15 minutes, stirring every few minutes. Mix other ingredients and add to cabbage. Heat to boiling point and serve.

Pan Fried Cabbage

1 head cabbage, shredded
4 slices bacon
1 onion, sliced thin
1 t. salt
1/2 t. black pepper
1 t. sugar

Fry bacon in skillet until crisp. Drain. Crumble bacon. A little extra oil can be added if needed to fry cabbage. Add cabbage, sugar, onion, salt, and pepper to skillet. Saute (stirring to keep from sticking)
until cabbage is partially cooked. Turn to high. Allow cabbage to cook till tender and lightly browned.

fry some bacon till crisp then add your cabbage (cut small) let fry until tender to your liking. add salt and pepper, thats it.
for the macaroni and cheese, cook mac. then drain and rinse. add 1 tsp butter and sprinkle red pepper, and mix. next take 1 can of evaporated milk and beat with 2eggs. mix macaroni, milk, and egg with shredded cheese ( your preference. put into a baking dish and bake for 30-45 minutes, or until lightly brown. if you like you can top with cheese before baking. good luck

Baked Macaroni and Cheese
Ingredients

Serves 8

* Coarse salt and ground pepper
* 1 pound elbow pasta, cooked and drained
* 4 tablespoons butter
* 1 small onion, chopped
* 1/4 cup all-purpose flour, (spooned and leveled)
* 4 cups milk
* 1/8 teaspoon cayenne pepper, (optional)
* 1 1/4 cups shredded (5 ounces) yellow cheddar cheese
* 1 1/4 cups shredded (5 ounces) white cheddar cheese
* 8 ounces ham, diced into 1/2-inch pieces
* 2 white sandwich bread

Directions

1. Preheat oven to 375 degrees. Cook pasta, and drain; reserve. Meanwhile, in a 5-quart heavy pot, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, 3 to 5 minutes. Whisk in flour to coat onion. In a slow steady stream, whisk in milk until there are no lumps.
2. Cook, whisking often, until mixture is thick and bubbly and coats the back of a wooden spoon, 6 to 8 minutes. Stir in cayenne, if using, and 1 cup each yellow and white cheddar cheese. Season with 1 teaspoon salt and 1/4 teaspoon pepper.
3. Toss pasta with cheese mixture; fold in ham. Transfer to a 9-by-13-inch baking dish or individual dishes. Set aside.
4. In a food processor, pulse bread until large crumbs form. Toss together with remaining 1/4 cup each white and yellow cheddar, and 1/4 teaspoon salt. Top pasta with breadcrumb mixture. Bake until top is golden, about 30 minutes.

FRIED CABBAGE

1/4 pound bacon,
2 small heads of cabbage
1 large onion,
salt and pepper to taste

In large skillet, fry bacon. While it is frying, core and cut cabbage into bite size pieces, then chop onion. Add to skillet, frying on medium heat until tender.

First of all. Cut the cabbage in half. Cut each side in two pieces. Then take out the white part. And also cut the cabbage up in some ridges and wash it. In a pan put a Small amount of water and two tea spoons of butter. And some vegetable oil. Then put the cabbage inside of there. Before you cover the cabbage up put some red pepper flacks. But a small amount. Salt and Pepper. Now cover it up and let steam. Then watch it. Get a fork and turn them over. But don't let them get cooked to long. Then add a tea spoon of sugar. Now that the cabbage looks transplant. that's when they are done.


Now about the macaroni. You are doing every thing else right but put a cup of sour cream. Now cover it up with some foil. Put it in the oven. And let it cook.

For the macaroni, instead of milk, use heavy cream, and you probably need to add extra butter as well. Now this is fattening, so only cook it on special occasions. :-). Also, consider adding Velveeta cheese to whatever type cheese you use, it's very creamy and moist. Only one egg. Any more will definitely make it dry.
