Ingredients
2 tablespoons extra-virgin olive oil
10 large fresh tomatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon minced garlic
2 tablespoons chopped onion
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
1 teaspoon sugar
1/2 teaspoon dried oregano
1/8 teaspoon freshly ground black pepper
2 red peppers, sliced into chunks
1 yellow summer squash, sliced lengthwise
1 zucchini, sliced lengthwise
1 sweet onion, sliced into 1/4-inch-wide rounds
8 ounces whole-wheat spaghetti
Directions
To make the marinara sauce, in a heavy skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add tomatoes, salt, garlic, chopped onions, basil, sugar, oregano and black pepper. Simmer uncovered until the sauce thickens, about 30 minutes.
Prepare a hot fire in a charcoal grill or heat a gas grill or broiler (grill). Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.
Brush the red peppers, squash, zucchini and sweet onion with the remaining olive oil. Place the vegetables on the grill rack or broiler pan. Grill or broil, turning as needed, until the vegetables are tender, about 5 to 8 minutes. Transfer the vegetables to a bowl and set aside.
Fill a large pot 3/4 full with water and bring to a boil. Add the pasta and cook until al dente (tender), about 10 to 12 minutes, or according to package directions. Drain the pasta thoroughly.
Divide the pasta evenly among individual plates. Top with the marinara sauce and grilled vegetables. Serve immediately.

Macaroni and cheese all the way. You can dress it up with some browned ground beef and onion, and/or chili beans.
Tuna and noodles is also another incredibly easy one. Just cook the noodles, then throw a can of Cream of Mushroom soup and Albacore tuna in.
I would definitely go with a pasta.

Cook for two minutes, check and cook for up to one minute more as needed.

I'd say spaghetti and meatballs is about as easy as you an get. You can buy frozen meatballs and heat them up in the oven or microwave, throw them in with some sauce and your go to go.
Honey Dijon Chicken
Very easy
Take equal amounts dijon mustard and some honey mix them together and slather it on your boneless chicken breasts cook at 350 for 25 minutes.
Get some rice in a box from the grocery store cook it according to the directions.
Buy your favorite veggies and steam it on the cook top.
spagetti is easy, with premade garlic bread that you just toast in the oven.
Or chili mac: Canned spagetti sauce, add cooked and drained ground beef. Boil elbow macaroni, drain, then place in cake pan, pour over spagetti mix, and stir lightly, sprinkle cheese on top, bake at 350 for 10 minuite till cheese is melted. Serve with garlic bread.
Or there is tons of "1 skillet" meals in the freezer section of any grocery that are pretty much just heat and eat but can be seen as pretty elegant when served with a salad.

This one is very simple...
Garlic Pasta
1/2 pound spaghetti
1/2 tbsp olive oil
6-8 cloves garlic
1 small onion
1 tsp dried basil
salt/pepper to taste
1/4-1/2 cup of olive oil
Bring a pot of water to the boil. Pot needs to be big enough for the pasta to fit in. Add a little salt to the water and put in the pasta. While the pasta is cooking, peel the garlic cloves and onion. Either mince the garlic or put it through a garlic press and cut the onion into small pieces (not too small). Saute in the 1/2 tbsp olive oil until the onion is soft. Add the basil to the garlic/onion mixture.
When the spaghetti is done drain and put it back in the pot (with the heat off). Put the other 1/4 - 1/2 cup of olive oil in with the garlic/onion/basil mixture and stir then pour it over the pasta. Add salt and pepper to taste. Great served with hot rolls.

Just add some canned veggies as side dishes (they can be heated in the microwave) and you have a complete meal! It is really delicious and so easy to make!
one pot meal = stew. brown some ground beef (1/4 pound per person), slice some onion (1/2 for three people) and add to beef. turn fire down to simmer. slice two carrots and one fist sized potatoe. wash all fresh veggies well. the more u slice them the quicker they cook. pick a canned vegetable such as whole kernel corn or green beans or some other favorite of yours. add one can. add the fresh veggies. add just enough water to barely cover and put a lid on. turn heat to medium.
go pick one seasoning plus salt and pepper. could be garlic powder, celery powder, chili powder, sweet basil, oregano. salt and pepper to taste. then add one of the others. garlic and oregano are very strong so be careful. always add less than u think. if ur worried about ruining the stew, then don't add anything but salt and pepper.
check the stew. if it's boiling, stir, cover and let it go until the potatoes and carrots are soft to the bite. then turn off the heat and uncover. go set ur table with silver, bowls, and small plates plus glasses for whatever drink ur serving. now u decide if ur going to serve from the cooking pot (very very casual) or u can ladle the stew (dip deep) into a serving bowl.
serve with cracker or rolls or bread or whatever ur imagination comes up with. have confidence. they're gonna think ur the best chef on the planet.
QUESADILLAS. all you need is cheese and tortillas, and if you want you can add either chicken or steak to it. easy.
Spaghetti, Ragu sauce, 1lb hamburger meat, and mushrooms. Also can add diced onions and bell peppers ot the meat when you brown it and also can add can of diced tomatoes to the sauce to change things up a little bit. Also can get frozen garlic bread and just brown it in the oven
