alaskan cod or icelandic cod or haddock for the fish
set fish on paper towels to drain off excess moisture
just russet potato for the chips, peel and cut into desired size chip or use some frozen chips
batter:
1c all purpose flour
1c self raising flour
1tsp salt
1tsp ground black pepper
2Tbsp veg oil
2 egg yolks
2 cups beer (I use sierra nevade pale all)
and in seperate bowl, 4 egg whites beaten with electric mixer until stiff peaks form (keep in seperate bowl)
beat batter til smooth, allow to sit 1/2 hour
fry chips in 350 deg veg oil until just soft, put aside
fold bowl of egg whites into batter
take a piece of fish and lightly flour in some all purpose flour, dip into batter and let excess batter run off
fry fish in 350-375 oil 3-4 min side or until golden brown and nice+crispy
after all fish has been fried return chips to fryer and fry until crispy+golden brown
serve with malt vinegar, salt, ketchup etc

I'm from the north of england and this is the fish+chip recipe I use almost weekly, as I can't get good fish+chip here in the USA
Yeah, just mix some cornmeal with pepper and a tad of salt. Dip the fish fillets (doesn't matter what type but cod works great) in slightly beaten cracked eggs. Then dip the egg-covered fish pieces in the cornmeal mixture. Deep fry for about 7 minutes or until it's done. For the chips, just slice some potatoes (specifically red potatoes) like you would for steak fries (like apple wedges) and deep fry those pieces until they're done. Add salt after they're done. You might want to add corn to your menu to. Good luck!

deep fat or oil (for frying)
8 medium white fish fillets
4 ounces self-raising flour
1/4 teaspoon salt
1 egg
1 tablespoon butter, melted
5 fluid ounces milk
lemon wedges (to garnish)
Half-fill a deep pan with melted fat or oil.
Heat until a faint haze rises from it (or until a bread cube sinks to the bottom of the pan, rises to the top immediately and turns golden in 50 seconds).
Sift the flour and salt into a bowl.
Beat to a smooth batter with unbeaten egg, butter and milk.
Coat 2 pieces of fish with batter.
Lift into the pan with a fork or kitchen tongs.
Fry until crisp and golden, allowing about 6-8 minutes for large pieces and 4-5 minutes for medium.
Remove from the pan and drain on unprinted (white) newspaper.
Garnish with lemon wedges, and serve with Fish and Chip Shop Curry Sauce
