sorry I don't do measuring, but I'll try

1/2 tsp crushed garlic
1/2 tsp dry basil (feel free to use any Italian spice)
tsp Dijon mustard
1/2 cup extra virgin olive oil
1/4 cup balsamic vinegar (use what ever vinegar you like)
wisk together....very easy

2 tablespoon apple cider vinegar
1 tablespoon chopped onion
1/4 cup water
2 tablespoon frozen apple juice
1 concentrate
1 clove garlic, cut in half
1 teaspoon honey
1/2 teaspoon crushed dried basil
1/2 teaspoon crushed dried oregano
1 pinch white pepper
2 canned artichoke hearts
1 (packed in water),
1 rinsed and drained
1 (about 1/2 cup)

Instructions:
Combine all ingredients in blender or food processor and puree until smooth.

Chill at least 15 minutes before serving.

Yields: 1 cup

Italian Dressing Mix

INGREDIENTS
1 tablespoon garlic salt
1 tablespoon onion powder
1 tablespoon white sugar
2 tablespoons dried oregano
1 teaspoon ground black pepper
1/4 teaspoon dried thyme
1 teaspoon dried basil
1 tablespoon dried parsley
1/4 teaspoon celery salt
2 tablespoons salt

DIRECTIONS
In a small bowl, mix together the garlic salt, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
To prepare dressing, whisk together 1/4 white vinegar, 2/3 cup canola oil, 2 tablespoons water and 2 tablespoons of the dry mix.

You said quick, so here is quick:

Vinegar, oil, salt, oregano. Use three parts oil to vinegar. Add mayo and stir into salad before serving. Like a Caesar salad. Add bacon and hard boiled egg to make it superb.

cheapest, fastest, and easiest to make from what you probably already have on hand:

1 tbsp or more dried Italian seasoning
1/2 tsp. minced or crushed garlic
1/3 cup olive or vegetable oil
1/3 cup cider, red wine, or balsamic vinegar
1/3 cup water
splash of lemon juice if you have some
salt and pepper to taste

The easiest way to mix these is to dump everything into a
dressing carafe and shake. If you don't have a carafe you
can just mix it with a whisk or a fork in a bowl.

get out your wishbone cruet and follow the vinegar, water and oil lines. Olive oil is best, and Regina red wine vinegar is best tasting. Pour it in the blender and add

1/2 teaspoon Italian seasoning
1 clove of garlic
1 tablespoon of Parmesan cheese
1 small wedge of onion.
the cheese and onion are optional , and a Delicious change blend in blender till smooth . This is so easy and good and the ingredients you already have in your pantry.
