Here is some variety...
Chicken Peach Bacon Salad...
INGREDIENTS:
* 4 peaches, peeled and chopped
* 2 tsp. lime juice
* 4 pieces bacon
* 3 boneless, skinless chicken breast halves, cut into 1" pieces
* 1/3 cup poppy seed salad dressing
* 1/2 cup chopped celery
* 3 cups torn lettuce
PREPARATION:
Combine peaches with lime juice in small bowl, toss gently and set aside. Cook bacon in a large nonstick skillet until crisp. Drain bacon on paper towels. Crumble bacon and set aside.
Drain bacon fat from skillet, reserving 1 Tbsp.
drippings. Add chicken to reserved drippings in skillet and cook and stir for 4-6 minutes or until chicken is no longer pink in center. Remove from heat. Toss chicken, salad dressing, celery, reserved chopped peaches, and lettuce in a large bowl.
Place salad on serving plate and sprinkle with bacon.
Peach Creme Brulee
INGREDIENTS:
* 2 cups canned peach halves, drained
* 1 cup sour cream
* 1/2 cup brown sugar
PREPARATION:
Place drained peach halves in a shallow glass baking dish. Spoon sour cream over peaches and sprinkle evenly with brown sugar. Broil 4-6" from the heat until sugar melts and caramelizes. Serves 6
Peach Salsa (great for topping grilled fishes)
INGREDIENTS:
* 2 peaches, peeled, pitted, and chopped
* 1/2 cup chopped green onions
* 1/2 tsp. red pepper flakes
* 1/4 tsp. salt
* dash pepper
* 2 Tbsp. chopped fresh cilantro
* 2 Tbsp. chopped red bell pepper
* 1 Tbsp. lime juice
PREPARATION:
Combine all ingredients in medium bowl and mix to blend. Cover and refrigerate 1-2 hours to blend flavors. Serve with grilled fish or chicken, or with taco chips for dipping.
Peach Pizza Pie
Ingredients:
1/2 cup butter or margarine, softened
1/4 cup confectioners' sugar
1 cup all-purpose flour
1 4-5 c sliced fresh peaches
----GLAZE----
2 tablespoon sugar
1 teaspoon cornstarch
1 1/8-1/4 t ground mace (optional)
1/2 cup orange juice
1/2 cup red currant jelly
1 whipped cream (optional)
Instructions:
In a mixing bowl, cream butter and sugar. Add flour and mix well. Pat into a greased 12 inch pizza pan; prick with a fork. Bake at 350 degrees for 10-15 minutes or until golden. Cool completely. Arrange peach slices on crust. In a saucepan, mix sugar, cornstarch and mace if desired. Add orange juice and jelly; cook and stir over medium heat until smooth. Bring to a boil; boil for 2 minutes. Remove from the heat and cool slightly, about 5 minutes. Spoon over peaches. Chill for 1 hour or until set. Garnish with whipped cream, if desired and serve immediately. Serves 12-15.
This is not a recipe but another idea. My mom always bought bushels of peaches in the summer. She would cut them up and add a bit of sugar. She would freeze them in ziploc bags or small containers. Then in the winter we could take them out, thaw them a bit and enjoy them. It is better than ice cream and a great treat for winter.

if you drink, get a few bottles of a nice crisp white wine, dump them all in a container, slice a whole bunch of fresh peaches in it, cover and chill for a few days, or until desired peachiness, drink on a hot summer afternoon.
you could also make peach jams/preserves.
or just basic cobblers, pies, and galettes. you can even grill them and serve them with sweetened ricotta.

Easy Peach Cobbler
1/2 cup unsalted butter, melted
1 cup all-purpose flour
2 cups sugar
3 teaspoons baking powder
Pinch salt
1 cup milk
4 cups peeled, pitted and thinly sliced fresh peaches (5 to 6 medium peaches)
1 tablespoon fresh lemon juice
Several dashes ground cinnamon or ground nutmeg (optional)
Preheat oven to 375 degrees.
Pour the melted butter into a 13 by 9 by 2-inch baking dish.
In a medium bowl, combine the flour, 1 cup sugar, the baking powder, and the salt and mix well. Stir in the milk, mixing until just combined. Pour this batter over the butter but do not stir them together.
In a small saucepan, combine the peaches, lemon juice, and remaining cup of sugar and bring to a boil over high heat, stirring constantly. Pour the peaches over the batter but do not stir them together. Sprinkle with cinnamon or nutmeg if desired.
Bake in the preheated oven for 40 to 45 minutes or until the top is golden-brown. Serve warm or cold.
