Answers:
It's usually 1/4 cup, unless you have the Egg Lover's kind which is thicker. Check the serving size and that equals one egg.

You have set up an invalid equation. There is no substitute for an egg.

~1/4 a cup of egg whites equals one egg.

~2 egg whites equal one egg

Baking:

~2 1/2 Tablespoons whipped together with 3 Tablespoons of Water

~1/4 cup Soy Yogurt

~1/4 cup pureed mashed silken firm tofu, with no chunks in it

~1/4 cup of applesauce, mashed banana, mashed pumpkin, or mashed potato with 1/4 teaspoon of baking soda

~or 1.5 Tablespoons of Ener-G Egg Replacer mixed well with 2 Tablespoons of Water

A good egg substitute I've successfully used when baking cakes or cookies is:

1 egg = 1/4 cup plain yogurt plus 1 Tbs. vegetable oil
(use either soy or milk yogurt)

One egg contains about 2 ounces of liquid.
