Can you can fruits using less sugar than the recipes call for?
I am interested in learning to can fruits but am wondering if they turn out alright using less sugar than the recipe calls for. Most jams and preserves just seem too sweet to me, and I would like to try for a more "true to the fruit" flavor. Any suggestions?

I don't think using slightly less sugar will change much although the sugar may be part of the preservation process. Also, fruit naturally has a sugar in it which may be why they're too sweet.
You need to use the exact amounts the recipe calls for.You need the proper amts.for the acid in the fruit.
Try using diabetic recipes which use a lot less sugar or they call for a sugar substitute to be used.
Sugar as well as salt inhibit bacterial growth, this is probably one reason that a lot of sugar is used. Be careful in the canning process and you should be ok.
Hm...I wouldn't think so because isn't the sugar what's acting as a preservative? Maybe you could use honey which is usually less "sugary". Just please don't use artificial sweeteners!
Unfortunately it can be dangerous to your health to can or preserve fruits without using the correct amount of sugar. Sugar sterilizes and preserves the fruits you are using. If you are worried about the amount of sugar not being healthy i would suggest using a sugar substitute like Spelnda. If you find that preserves, jams or canned fruit is too sweet for you, you can dilute it with a little extra water after boiling it. Also, the sweetness is also determined by the ripeness of your fruits. If you have perfectly ripe fruit there natural sugars will be more prominent then fruits that aren't. Also certain fruits have more sugar than others. Drupes(pitted fruit) ( cherries, plums and peaches) tend to be sweeter than pomes (apples and pears) and false berries (cranberrries and bananas).

You can, but there would be less of a flavor or less of a taste to whatever your making.
yes you can add less sugar....the finished product wont be as sweet.......but, you have to adjust the "pressure cooking time" I use less sugar but I use the canning time for the fruit as if I were just canning the fruit...This should come with your pressure cooker (canner)....if you are not using a preasure canner then you cannot safely can fruit.... go to misssvickie.com
