Mandarin Orange Cake?!


Question:

Mandarin Orange Cake?

I have made this recipe as a cake--has anyone tried to make cupcakes using the same recipe? I think they will be okay; but would like some input if available.

1 yellow cake mix
4 eggs
1 cup vegetable oil
1 can mandarin orange segments
1 (8 ounce) container frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple with juice
1 (3.5 ounce) package instant vanilla pudding mix
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, combine cake mix, eggs, oil and mandarin oranges with juice. Beat until smooth. Pour batter into prepared pan.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
To make the topping: In a large bowl, beat together whipped topping, pineapple with juice and dry pudding mix until blended. Spread on cake.

I made jumbo cupcakes and frosted them with this icing (courtesy of Paula Deen). They turned out like a pastry chef at a 5 star restaurant had made them--yummy!
Orange Cream Cheese Frosting:
1 (8-ounce) package cream cheese, softened
4 tablespoons softened butter
1 (1-pound) box confectioners' sugar
2 tablespoons orange zest
2 tablespoons orange juice
In a large mixing bowl, whip the butter and cream cheese together with a hand-held electric mixer. Gradually beat in the confectioners' sugar until it is all combined and smooth. Beat in the orange zest and juice.

That recipe is a punch bowl cake recipe and can be used for cupcakes filled 2/3's and reduce the baking time by 10 minutes. Toothpick in the center will come out moist but not wet when done.

i haven't, but this sounds like a delicious recipe.
