Try Splenda.com,they even make a cookbook with Splenda recipes,my mom bought one for me. I'm diabetic, too. Think she bought it at Sam's wholesale club
My grandpa loves this bread pudding...
INGREDIENTS
1 (20 ounce) loaf French bread
1 quart milk
3 egg
2 cups granular sucrolose sweetener (eg. Splenda?)
2 tablespoons vanilla
3 tablespoons margarine, melted
1 cup raisins
1 cup granular sucrolose sweetener (eg. Splenda?)
1 egg
1/2 cup margarine, melted
1/4 cup whiskey, or to taste
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Break bread into pieces, and place into a large bowl. Pour milk over bread, and crush with your hands until well blended. Stir in 3 eggs, 2 cups sweetener, vanilla, 3 tablespoons margarine, and raisins until evenly mixed. Transfer to the prepared pan.
Bake for 45 to 60 minutes in the preheated oven, or until very firm.
To make the sauce: In a medium bowl, cream together 1 cup sweetener and 1 egg until smooth. Gradually mix in the melted margarine, and continue stirring to dissolve sweetener. If the sauce is difficult to blend, it may be heated gently, but be careful not to curdle the egg. Gradually stir in whiskey which should make the sauce creamy smooth.
To serve: Allow pudding to cool completely, then cut into cubes, and place into individual heat-proof serving dishes. Pour sauce over, and heat under the broiler until golden, about 3 minutes.
My Father in law and DH both have diabets. I just make almost any recipe and sub Splenda for sugar.
Our favs are pumpkin pie and apple pie. Remember, diabetics must watch the other simple carbs too. This does not mean they are forbidden.
Maybe these will be a good starting place for you

Hi,
1. Check out the Kraft website, they have recipes for sugar free pies and cheesecakes.
http://www.kraftfoods.com/kf
2. I use alot of sugar alternatives and just wanted to let you know that when using splenda, it can be very bitter with chocolate. Since it is not a bulking agent like sugar, it can also make meringues fall and cheesecakes flat. I would recommend blending an alternative with the splenda, it makes a huge difference and to me virtually leaves no aftertaste.
Here are some other really good alternatives availible online or at your local health food store. You can search online for tips in baking because they sometimes require different cooking times, methods and temps. If your Dad can have some sugar, you can go with the Splenda/sugar blends. The brown sugar blend is very good.
Stevia Liquid Glycerite
Agave Nectar (syrup) ...low glycemic, but not sugar-free
Whey-Low......low glycemic, but not sugar-free
Erythritol
Xylitol
Josephs sugar free maple syrup (made with maltitol)
***sweeteners ending with "ol", otherwise known as sugar alcohols or polyols can sometimes give a "gastric" problems if consumed in excess.
p.s.
There are alot of great sugar free baking items in the stores now: cake mixes, jam, candy, chocolates, caramel, cookies, ice cream, whipped cream, pie fillings, pudding and jello. Just check along side of the regular items or visit the diabetic section of the store. Good Luck and have fun baking for your Dad.
Wal-Mart has Hunts sugar-free pudding snack packs (by Jello display or near yogurt).
