Aunt Mary's Tea Biscuits

2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons sugar
1/3 cup shortening
1 cup milk

Combine first 4 ingredients. Cut in shortening with pastry cutter or two knives until it resembles coarse meal. Pour milk into center and stir with fork until mixture leaves the sides of the bowl. Knead carefully on floured board. Roll or pat to 3/4 inch thickness and cut with 2-inch cookie cutter. Place on ungreased sheet and bake at 450 F for 10 to 15 minutes until nicely browned. If you wish, you can brush tops with milk to make them brown nicely.

TEA BISCUITS

3 1/3 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 tsp. nutmeg
1 c. butter
1 c. sugar
1 egg
1/2 c. milk
1 c. raisins
Cinnamon-sugar mixture

Cream sugar and butter. Blend flour, salt, baking powder, soda and nutmeg. Add to creamed mixture.

Beat egg into milk. Add to mixture and blend. Add raisins. Dough will be very stiff.

Pinch off portion of dough and roll on floured board to about 1/4" thick. Use a small cookie cutter and cut out biscuits. Continue pinching off dough until tea biscuits are cut.

Bake in ungreased electric skillet set at 300 degrees turning biscuits so that they brown on each side (about 5 minutes or so per side).

While still warm, sprinkle or roll in cinnamon-sugar mixture. Store tightly closed in tin box.

To get bite size tea biscuits, remove cap from empty pill bottle, 1 1/2". Invert and use as cookie cutter. This will give very large yield, about 10 dozen.

Special Tea Biscuits

INGREDIENTS:
2 cups flour
1/4 cup butter
3/4 cup milk
1/3 cup butter, melted
1/3 cup sugar
2 tbs sugar
1 tbs baking powder
1 tsp salt
1/4 tsp nutmeg
1 egg
1/2 tsp mace

PREPARATION:
Preheat your oven to 450F. In a large bowl, sift together flour, 2tbs sugar, baking powder, salt and nutmeg. Cut the butter in with a fork. In another bowl, whip egg and milk together. Add to flour mixture.Mix well and form into a ball of dough. Knead gently on a floured board. Roll out to 1/2 inch thick. Cut out circles about an inch in diameter. Bake on a cookie sheet for 7 minutes, or until golden. Dip half of each biscuit into melted butter, and then into sugar and mace (mixed together)

Russian Tea Biscuits

2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 cup butter, softened
3/4 cup confectioners' sugar
1 teaspoon vodka
3/4 cup hazelnuts, finely chopped
1/3 cup confectioners' sugar for decoration
DIRECTIONS
Pre-heat oven to 325 degrees F (165 degrees C).
Combine flour and salt and set aside.
In a large bowl, cream together butter and confectioners' sugar blending well. Beat in vodka. Gradually blend in flour/salt mixture. Fold in chopped hazelnuts.
Break off dough in walnut sized pieces and roll into balls. On ungreased baking sheets place balls 1-1/2 inches apart. Flatten slightly. Bake for 12-15 minutes until lightly colored. Sprinkle hot cookies with confectioners' sugar. Cool on wire racks.
