hmmmm, good question...........I do believe it is when the emulsification process takes place when adding the oil to the egg whites.

Ranita is correct. If you shake up a mix of oily and watery liquids you get a milky-looking emulsion. In fact milk itself is an emulsion. Mayonnaise contains vinegar which is watery, vegetable oil and egg which is an emulsifier to stop the oil and vinegar separating, plus some other ingredients like mustard.
