Rich Creamy Mushroom Sauce Recipe Needed......................

Does anyhow know a great recipe for a rich, but creamy mushroom sauce - something for on steak or chicken..?

Answers:
This is perhaps one of the easiest recipes around, take a punnet or pack (250gms) of mushrooms you can use button mushrooms or ones called portobellini, if you have access to porcini (very expensive) use them, slice your mushrooms and put them into a pan with some melted butter, gently cook them until the mushrooms begin to give out their waterthen add some nice thick cream and let this bubble away and reduce the cream, this will thicken it up, check the salt and pepper and voila mushroom sauce, you can at this stage add some chopped parsley, up to you.

You can also thicken the mixture up with a teaspoon of corn flour mixed with a little water. Simple and elegant

Here are some you might like:

8 ounces sliced mushrooms, button or baby bellas (crimini)
1 tablespoon butter
1 tablespoon olive oil
1/2 cup dry red wine
1 cup beef broth
2 tablespoons flour
3 tablespoons cold water
salt and pepper, to taste
1 teaspoon dried parsley flakes
PREPARATION:
Sauté mushrooms in butter and oil for 3 to 5 minutes, stirring occasionally; add red wine and simmer for a few minutes. Add beef broth and simmer to reduce a bit, about 5 minutes. Combine flour and cold water and whisk until smooth. Stir into the mushrooms until well blended. Season to taste and simmer for about 1 minute, until thickened. If too thick, add a little more broth. Add parsley and salt and pepper to taste.
Makes about 1 1/2 to 2 cups.

Ingredients for Mushroom Sauce Recipe 1
4 tablespoons butter or other fat
4 tablespoons flour
2 cups stock
1 cup mushrooms, fresh or canned
Salt and pepper
Instructions
Make a brown sauce of the fat, flour and stock.
Add one cup mushrooms and cook until hot.
If mushrooms are not very gently treated, they will become tough.
Too much cooking ruins them, three or four minutes being quite sufficient for those that have been canned and five or six for fresh ones.
This sauce is used with any kind of roasted, broiled or braised meat, particularly with beef.

Campbell's Cream of Mushroom Soup. It makes a quick, easy base to start from. You can add anything you want to it, like garlic, shallots, dice onions, diced tomatoes, etc. It's a little bland by itself, but if it's a base, it's a good, fast, easy place to start. Use milk or cream to thin it, not water like the can says. Keeps it rich and creamy.

A lot of people might consider it pedestrian and turn their noses up at it, but if you don't have 20-30 mins. to prep a sauce base, it makes an excellent foundation that you can build upon. While it works by itself as a mediocre sauce for steaks or chops, the possibilities are endless. You can add anything you want to it.

I use those large dark Portobello mushrooms, or field mushrooms and fry them gently in butter and oil, until they are really dark, almost black and then add some flour.
To make it really rich I would use full body cream and treat it as if I was making a roux.

The easiest way to make creamy mushroom sauce is to use a can of the infamous Campbell's cream of mushroom soup.

Instead of using a can of water to mix, you would use half a can of full cream milk or half & half milk.

Slowly heat the mixture on low in a saucepan and sprinkle pinches of salt and pepper to taste. You can even dice up a couple of fresh mushrooms and add them to the sauce to give it more bite.

Try this:

Make a basic thin white sauce then add sauteed onions, crimini mushrooms, beef broth (or chicken broth of you're putting it on chicken) and a little browning sauce (Kitchen Bouquet or similar). You could also add a bit of soy sauce, worcestershire sauce, and/or red wine for richness.

There are also some packets of mushroom gravy mix you can buy at the store to augment your recipe.
