Apricot Chicken:
Chicken thigh fillets cut into big bite size pieces (1 kg)
1 packet of french onion soup mix
1 packet vegetable soup mix
1 cup water
2 cans of Apricot nectar.

Mix up nectar and water with soup mixes, pour over chicken in baking dish and bake 180C 350F 50-60 min stirring once throughout. Serve with boiled rice or veges such as mashed potatoe, peas, carrots and broccoli.

Tuna and noodles:

Noodles
Cream of Mushroom soup
Canned tuna

Just cook the noodles, then add as much soup and tuna to make it the consistency/taste you want.


Cheeseburger Macaroni:

Macaroni and Cheese dinner
Lean ground beef
Fresh onion

Cook the macaroni according to the directions; at the same time brown the ground beef and onion with salt and pepper to taste. Mix into the macaroni and cheese as soon as it's done.

Spaghetti and Meat Sauce:

Spaghetti
Lean ground beef
Fresh onion
Fresh mushrooms
Various Italian seasonings
Can/jar spaghetti sauce (such as Prego or Ragu)

Cook the spaghetti; at the same time brown the ground beef and onion with salt, pepper, and Italian seasonings to taste. Add the mushrooms, cook for a minute or two, then add the spaghetti sauce. Serve over the spaghetti with parmigan cheese.

this is my mother-in-law's recipe, but i've noted where i changed it up. it was good the way it was, but now it's better!

creamy chicken enchiladas

3-4 chicken breast, boiled, then cool and shred (i use a rotisserie chicken from the store)
1 small can green chilies
1 medium onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
10-12 oz. shredded monterey jack cheese (i mix it up with pepper jack also)
2 cans green chili enchilada sauce (i use 1 can green enchilada sauce mixed with one jar of good salsa verde)
2 tbs. butter
tortillas
sour cream
salsa
olives

in sauce pan saute the onion in butter, add soups, chilies and 1 can of enchilada sauce, bring to boil, add shredded chicken, lower heat ans cook for 5 minutes.
put tortillas in microwave to soften for about 45 seconds

place about 2-3 tbl. of chicken mixture in tortilla and roll, place in baking dish. cover with other can of sauce and cheese.
bake @ 350 degrees for 30-40 min.

garnish with salsa, olives and sour cream

ok here's my recipe 4 scrambled eggs: first u get 2 eggs (or 1), about a cup of milk, salt, bowl, fork, skillet, butter. first take a little bit of butter and put it inn your skillet and set the stove on high so u can melt the butter in it. next you take your bowl, your eggs, your milk, and your fork and crack your eggs in the bowl add about a cup of water and stir until it looks like it had chunks of bacon in it. (which it don't) then you pour the eggs into your skillet and turn to your dial on your oven to a lower number and stir. it may take a while but make sure u keep stirrin and your eggs will soon take shape. hope this helps and if you need to make anthing clearer then my email is albolen@yahoo.com.

Easy Apple Betty

1 can apple pie filling
2 packages instant brown sugar and spice oatmeal
butter
cinnamon

Place 5 pats butter in the bottom of 2inx9in oven dish
Spoon 1/2 apple pie filling over butter
Empty one package instant oatmeal over pie filling
Sprinkle cinnamon over ingredients
Repeat pie filling, oatmeal, and cinnamon layers
Place 5 pats butter on top
Bake uncovered in 325 degree oven approx 30 minutes or until hot and bubbly.
Serve warm

I just sent you off a real easy quick recipe. I have made this over the years for my family as my mother and her mother has. Enjoy dear hope you like it ;-)
PS. I just took the recipe for the easy Apple Betty. (I have to try it out)

Baked Potato Chip Chicken
1 fryer chicken, cut up
Crushed potato chips
Melted butter

Dunk chicken in melted butter, and roll in potato chips. Bake at 350 degrees for 45 minutes.
I think you could also use soy chips, if you want to. The best ones, are the ones at Trader Joe's! I have some more easy recips, some where, including a corn one that's great, for Thanksgiving and Christmas!

Chicken Pie (Lazy Man Version)
Buy 1 kg at the Supermarket Deli bar Shredded Chicken
Slice a large onion into rings or crescents and soften in oil in a fry pan.
Sift over some plain white flour and stir over med/low heat for a couple of minutes and stir in some milk until you have a fairly thick sauce.
Add shredded chicken and combine. Turn off heat and let the sauce cool and the chicken warm.
In the mean time line a greased pie dish with a sheet of puff pastry.
Individual oval pie dishes could be used if you have 4 or more.
Once the chicken mix has cooled 2/3 rds fill the pie dishes.
Cover with another piece of pastry trim edges and brush with milk. Spear the top with the tip of a knife to create steam vent.
Place in a preheated oven 160C for 30-40 minutes until the tops are browned nicely.
Remove and place on a wire rack to cool.

A teaspoon of curry powder added with the flour would be great.
