1 cup of sugar
1/4 cup of flour
salt
1 cup of water
3 eggs (separated)
2 tbsp butter
1/4 cup of lemon juice
2 tsp grated lemon rind

Mix sugar, flour, salt. Add 1/4 cup of water and mix until smooth. Add the rest of the water, and bring the mixture to a boil, stirring all the while. Cook until thickened and the flour is cooked (5 - 8 minutes).
Beat the egg yolks. Add some of the hot mixture to them, then add the heated yolks to the sugar/flour/ water mixture. Cook 2 or 3 minutes.

Remove from heat add the lemon juice, rind, and butter. Mix well and let cool before putting it into a baked pie shell.

Beat the whites until stiff, add 1 or 2 tbsp sugar and a few drops of vanilla. Beat very well at very high speed.

Spread on the lemon filling.

Bake at 300 degrees until the white is brown.

Ingredients:

1 cup boiling water
4 tablespoons lemon juice
2 tablespoons butter

1 pinch salt
1 lemon, grated rind only
3 egg whites
2 tablespoons granulated sugar
1 baked pie shell

Directions:

Combine cornstarch and sugar. Add water slowly, stirring constantly until thick and smooth. Add slightly beaten egg yolks, butter, lemon rind, juice and salt. Cook for 2 to 3 minutes.

Pour into baked pie shell. Cover with meringue made with egg whites and sugar stiffly beaten.

Bake at 325 degrees F for 15 minutes or until meringue is light brown. Cool to room temperature before refrigerating to keep meringue from weeping.

Lemon Chess Pie

3 eggs, beaten until light
1 1/2 cups sugar
1 1/2 lemons, juice of
1 lemon, zest of
3 tablespoons butter, melted
1/2 teaspoon salt
1 pastry shells, unbaked

# Preheat oven to 350 degrees.
# Combine first 6 ingredients and pour into the pastry shell.
# Bake for 25-30 minutes.

1 can Eagle Brand Milk
3 egg yolks
1/2 cup lemon juice

1 Graham cracker crust

Directions:
Preheat oven to 325°F. Mix first 3 ingredients with mixer until blended; pour into crust. Bake for 30 minutes. Place in refrigerator until cool. Top with Cool Whip before serving.

? 3 whole eggs
? 1 cup sugar
? 4 tablespoon butter, melted
? 1/4 cup cream
? 4 tablespoon lemon juice
? 1 tablespoon grated lemon rind
? one unbaked 9 inch pie crust

Preheat oven to 350 degrees. Beat eggs and sugar together for 2 minutes. Add butter and cream; beat for 2 more minutes. Add lemon juice and rind, mix well. Pour into crust and bake 30-40 minutes, until top is medium brown and jiggling at the middle third of the pie. It will set up completely as it cools.

Serves 6.

Lime Pie

1 tbsp. unflavored gelatin
1/4 cup cold water
4 eggs, separated
1 cup sugar, divide
1/3 cup lime juice
1/8 tsp. salt
2 to 3 tsps. grated lime peel
green food coloring
1 baked, 9" pie shell
1/2 cup heavy cream, whipped

Soften gelatin in cold water. Beat egg yolks, add ? cup sugar, lime juice, and salt. Cook over hot water stirring constantly, until thickened. Add lime peel and gelatin. Stir until gelatin is dissolved and add food coloring to tint a soft pale green. Cool. Beat egg whites until stiff, adding remaining sugar slowly. Fold into lime mixture. Pour into pie shell, chill until firm. Garnish with whipped cream or meringue.
