Ingredients:
Dough:
5 cups all purpose flour
6 jumbo eggs
a bit of water

Filling:
1 lb ricotta cheese - preferably goat ricotta
1 egg
1 1/2 cups grated parmesan cheese
1/2 cup grated dry bread crumbs
salt and/or garlic salt to taste
pepper to taste
1 tbsp crushed dry basil
1 tbsp crushed dry marjoram
a little milk

Directions:
Make a well in the flour and add the eggs. With a fork beat the eggs incorporating the flour as you go along. When you can no longer work the dough with a fork use your hands to mix the dough. Add a small amount of water at a time (1 tbsp at a time) to hold everything together. Do not use more than 4 tbsp or the dough will be too soft. Knead the dough on a floured board until smooth and creamy yellow throughout. Cover with a bowl and let it sit for about 1/2 hour while you clean up and make the filling..

If you have a spaghetti machine roll out strips of dough about 14" long and 4" wide. These can be used on a raviolli cutter or you can make each raviolli by hand.

By Hand:
Down the center of the strip place a teaspoon of the filling approximately 2" apart. Place another strip on top. Gently press the top strip down in between the filling drops and all around. With a wavy rolling cutter or a very sharp knife, cut the dough between the filling drops. Seal each raviolli with the edges of tines of a fork. Trim away any excess dough.

By raviolli cutter:
Place the strip on the bottom portion of the cutter. Use the filling press to make the indentations. Gently remove the filling press. Fill each depression with the filling. Place a second strip on top and with a rolling pin press the two strips together. You need to press hard to make the wavy part of the raviolli cutter come through. This makes 10 2" raviollis at one time.

One pound of ricotta should make about 100 2 1/2" raviollis. These can be frozen for use at a later time.

PM MANILA MAN, i am a PINOY working here in Spain as cook in a private hospital. there are a lot of ways to prepare raviolis. the most simple is just with tomato sauce, sauteed with garlic and finely chopped onions. you can also try it with cooking Nata(liquid) and bacon like carbonara. The most common way of preparing it is with finely chopped onion and olive oil. it is called al ajillo.

My mother used to make home made raviolis around the holiday season (Christmas). She used a basic egg noodle dough and left overs. With spices and garlic (lot's of garlic for my tastes) it is amazing what a person can came up with. Meat, cheese and veggies are good starters. Although I have made them with only vegetables and whatever cheese was on hand at the time. Let your mind wander as they are fun ! GOOD LUCK !!

Cheese Raviolli:

Cheese Raviolli Ingredients:

8 squares of 4 x 4 squares of fresh pasta
3/4 cup ricotta cheese
1/4 cup parmesan cheese
1/4 cup goat cheese
2 cloves garlic chopped
salt and pepper to taste

Tomato Broth:
2 tsp olive oil
3 cloves garlic chopped
3 shallots chopped
1/2 cup red wine
1 cup strong chicken stock
4 very ripe tomatoes seeded and chopped
2 tblsp minced sundried tomatoes
1/2 tsp cracked black pepper
1 tblsp chopped basil
1/3 cup parmesan cheese

Cheese Raviolli Method:

For the ravioli. In a small bowl mix together ricotta cheese, parmesan cheese, goat cheese, and garlic and mix well. Season with salt and pepper and mix well.

Lay 4 of the squares of pasta out on a board and moisten the edges well with water. Place about 1/4 cup of the cheese mixture in the middle of the pasta then top with a square of pasta and crimp the edge well. Set aside until ready to serve.

For the tomato broth heat a large saute pan with olive oil until very hot. Add garlic and shallots and saute until you can smell the aroma about 1 minute. Add red wine and reduce about 3 minutes until almost dry add chicken stock and tomatoes and cook over high heat, reduce after about 5 minutes. Add sundried tomatoes, basil and pepper and simmer for about 2 minutes. Season with salt. Keep warm.

To assemble heat 2 quarts of salted water until boiling, add the ravioli and cook just until the water comes back to a boil about 2 to 3 minutes. Place the ravioli into a soup plate then pour the tomato broth over the ravioli. Serve the Cheese Raviolli hot and garnished with parmesan cheese.
