These are the dumplings my mom made when we were kids. Mom never measured things so the amounts are approximations to guide me.

Mashed Potato Dumplings

leftover cold mashed potatoes (made with russet potatoes, butter, milk)
flour
eggs
salt

(approximately 1 to 1 1/2 cups mashed potatoes:1 egg:1/2 cup flour)

Add egg and salt to mashed potatoes and mix with a fork. Add flour to potatoes and knead well on a floured board, adding flour as needed. Do not add too much flour or else dumplings will be heavy. Dough may remain slightly sticky. Take a handful of dough and roll out to about 1 inch thickness (the shape of a very large long pencil). Cut rolled dough into about 1 or 2 inch pieces. Place dumplings in salted boiling water. Gently stir to keep dumplings from sticking to the bottom. After dumplings float to the top, continue to cook them for about 5 minutes. Carefully drain into a colander and gently rinse with cold water. (You may wish to remove dumplings from water with a slotted spoon rather than dump the whole pot at once.) Cool well. If not using immediately then cover and refrigerate.

I roll one test dumpling and cook it to make sure it remains together in the boiling water. If the dumpling falls apart in the water or seems to be to mushy then knead in a little more flour to your potatoes.

Potato Dumplings with Bacon and Onions [6 servings]

2 large potatoes, peeled and chopped
2 large eggs
Flour
1/4 pound bacon, chopped
1/2 large onion, chopped

Bring a large pot of lightly salted water to boil.
Place potatoes in food processor, and pulse until finely chopped. Add eggs, and pulse a few times to combine. Pour mixture into a large bowl. Mix in enough flour to make a very thick dough.
Place dough by spoonfuls into boiling water. Boil until done, about 20 minutes (depending on size). Drain, and set dumplings aside.
Place chopped bacon and onion in a skillet over medium heat. Cook a few minutes until bacon releases fat. Place hot dumplings into pan; cook until bacon is crisp and onions and dumplings are browned.

Potato Dumplings

6 medium-size potatoes, boiled in their skins
2 eggs, lightly beaten
2/3 cup sifted flour
2 teaspoons salt
1/4 teaspoon white pepper
1/2 teaspoon nutmeg (optional)

When cool enough to handle, peel and mash or rice the potatoes. Beat in all the remaining ingredients. Shape into 1 or 2-inch balls. Drop into just boiling, salted water and cook for 7 to 10 minutes. Drain. Serve with sauerbraten.
