When cooking shiitake mushrooms is best to leave the stems attached?


Answers:
I trim the bottom part of the stem off, as it is tougher, but leave at least half of it on. The saute up just fine this way.

it is best to remove them, as with most other fungus the stems are somewhat tough, you could though save them, and dice them very small and add them to your favorite recipes to add flavor...

WHEN COOKING MOST MUSHROOMS, IT IS A MATTER OF PERSONAL PREFERENCE.SOME PEOPLE SAY THEY ARE TOUGHER TO CHEW. WHEN I COOK THEM I USUALLY CUT MY STEMS OFF.

With Shiitakes in particular I have found the stem portions to be especially woody or tough. While this is a help is some situations I prefer to cut them off just below the cap.
