Need a crispy batter for frying haddock?!

Need a crispy batter for frying haddock?

and a special recipe. My husband loves fried haddock, but i have used a beer batter, and it comes out crispy, but takes a long time to brown up, in peanut oil, but then it starts wilting down as he eats it. any suggestions? thankyou in advance

use plain flour, salt , pepper, cayenne pepper, dried thyme herb, cream, soda water/tonic water, egg white.

the batter should be able to coat your finger while it drips slowly down.

dust your fillets in flour then coat with the batter and fry.

Try serving it with fried chips then tossed with white vinegar and salt. use tabasco or bbq sauce as a dip.

goes well with a crisp white wine, beer or grapefruit juice.

CRISPY BATTER FOR FRIED HADDOCK

Use 3 times as much flour as baking powder. Season with salt and pepper. Add water to make a batter. Dip haddock in mixture. Fry until done.

Dip the Haddock in egg and then Italian bread crumbs.. Bake it in the oven.. It is crisp and juicy..
