I got this one from YA, the guy said he should charge a dollar for everytime he posted this recipe, and he is right. It is awesome, my husband called it restaurant quality. Although he is not a rib fan, we went out and bought several racks yesterday and they are in the freezer, waiting their turn.
Memphis Dry Rub Ribs
2 racks baby back ribs (4 to 5 pounds)
For the rub
2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon dark brown sugar
1-1/2 teaspoons salt
1-1/2 teaspoons celery salt
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon cumin
1/4 teaspoon cayenne pepper
For the mop sauce (optional)
2 cups distilled white vinegar
1/2 cup water
1/2 cup Dijon mustard
1 tablespoon salt
2 cups hickory chips or chunks, soaked in cold water
1. Wash the ribs and blot dry. Remove the thin papery skin on the back of each rack of ribs. (Pull it off in a sheet with your fingers, using a corner of a dish towel to gain a secure grip.)
2. Combine the ingredients for the rub (the paprika, black pepper, sugar, salt, celery salt, cayenne, garlic powder, mustard, and cumin) in mixing bowl and stir with your fingers to mix. Rub 2/3 of this mixture on the ribs on both sides. Transfer the ribs to a roasting pan and let marinate for at least 4 hours, preferably overnight.
3. Set up the grill for indirect grilling and preheat to medium (about 350 degrees). Place a drip pan in the center. If using a gas grill, place all the chips in the smoker box or smoker pouch and preheat the grill to high. When smoke appears, lower the heat to medium. If using a charcoal grill, toss the wood chips on the coals.
4. Place the ribs on the grill over the drip pan and cover the grill. Cook the ribs until cooked, 1-1/4 to 1-1/2 hours. Start basting with mop sauce after 30 minutes, basting every 20 minutes. If using a charcoal grill, replenish the coals after 1 hour. The ribs are done when the meat is very tender and it has shrunk back from the ends of the bones.
5. Transfer the ribs to a cutting board or platter. Mop one final time with mop sauce and sprinkle with the remaining rub. Serve with your favorite barbecue sauce on the side.

Homemade bbq sauce:
- 1 cup ketchup
- 1 tablespoon mustard
- 1 teaspoon worshire sauce
- 1 tablespoon brown sugar
- 2-4 tablespoons of white vinegar
Mix it all together and you have your bbq sauce. The more vinegar you add, the more of a bite the sauce.
I've tried a ton of rib recipes and this is my favorite:
3 cups pineapple juice
1 1/2 cups brown sugar
1 1/2 tablespoons mustard powder
1/3 cup ketchup
1/3 cup red wine vinegar
1 1/2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1/2 teaspoon ground cloves
2 teaspoons ground ginger
4 cloves garlic, minced
1/2 teaspoon cayenne pepper
2 pounds baby back pork ribs (country style work well also)
1 (18 ounce) bottle barbeque sauce
DIRECTIONS
In a large baking dish, mix together the pineapple juice, brown sugar, mustard powder, ketchup, red wine vinegar, lemon juice, and soy sauce. Season with cloves, ginger, garlic, and cayenne pepper. Cut ribs into serving size pieces, and place into the marinade. Cover, and refrigerate, turning occasionally, for 8 hours or overnight.
Preheat oven to 275 degrees F (80 degrees C). Cook ribs in marinade for 1 1/2 hours, turning occasionally to ensure even cooking.
Preheat grill for medium heat.
Lightly oil grate. Grill ribs for 15 to 20 minutes, basting with barbecue sauce, and turning frequently until nicely glazed.

My husband seasons the ribs with salt, pepper and garlic powder then roasts them in the oven at 250 degrees for 3-5 hours or until the meat pulls easily from the bone. Then he slathers them with bbq sauce and sears them on a hot grill for 4-6 minutes or until the sauce is nice and browned.
First put salt and pepper all over the ribs and make sure it rubbed all over. Then put ribs in a pot and then boil them in beer (enough beer to cover ribs). Just do it long enough until they are mostly cooked (30mins or so). Then take them out, and grill them with your bbq sauce.
