Question:

Controlling charcoal temperature and some bratwursts questions...?

It seems like whenever me and my dad grill out, our charcoal grill always seems just too hot. We are grilling bratwurst tonight and have a few questions.

What are some ways we can control the temperature; use less coals, don't that stack them too high while were waiting for them burn, etc?

Also, what kind of beer should we boil our bratwurst in? What ever our favorite is, or do you guys recommend something.

Also, what companies brand bratwurst do you recommend.

I have looked online and it seems everybody suggests to boil them in bear for about ten minutes, and then grill them at a very low heat for about 20- 30 minutes. Does this seem about right? What about putting them inside of ten foil and then placing them right on the charcoal? We are not big fans of onions so we probably wont be using any, unless you guys suggest otherwise. Probably just straight up bratwurst on buns.

Any help is greatly appreciated.


Answers:
Light your coals and wait until they are white hot and then spread them out in an even layer, this will give you a nice even heat. Don't boil the bratwurt, gently poach them. You can use any kind of beer you want.

ok Beer, what ever you like I add onions chopped in my beer with th then drain the onions and use them as a topping for the brat, on a grill if your doing burgers as well cook the burgers first then your brats, if it's brats only you want enough coals to cover the bottom or less, set your grating to the highest setting furthest from the coals, do not cover the grill and turn your brats alot until brown and yummy
