Peeling hard boiled eggs?

is there a trick to get the shell to come off without tearing up the egg? i use fresh eggs from my own chickens(ameracuna-easter chickens).

The problem is that you used fresh eggs.

On a fresh egg, that membrane that keeps the shell and the white of the egg tight together is still very, very tight. When you boil the egg and try to peel it, this membrane pulls the egg apart.

Next time you are going to boil eggs, use older eggs. This membrane will have had time to dry out and weaken - and when you peel the eggs, you won't have any problems.

As a baker, I always have lots of eggs around. I usually will keep a dozen or so that I let "age." I will use that dozen up to three weeks after I have purchased them to make them easier to peel. Restaurants and food production companies that use hard boiled eggs will set the eggs aside about a week before processing them.

If you are stuck using fresh eggs, let them cool only slightly and roll each egg gently until the entire shell is cracked all over. Under running water - again warm to keep the membrane soft - peel the shell off slowly. The more you crack the shell, the easier it will be to slide off.

after boling them imeadlitley put them in cold water

I find putting the eggs into water thats already boiling and cooling under cold water or ice makes the shells just slide off.

Try peeling the egg before you boil it. But I always eat the egg shells - they are rich in calcium. Crush them up and they make egg salad taste crunchy.

Put the egg on the table and lightly press down on it, then roll it back and forth between your hand and the table, applying gentle pressure. That should loosen the shell to the point that it is easy to peel off.

put it in cold water for a few minutes then roll the egg (to crack the shell) berfore peeling. I find this to bee the best way.

I have that problem too. I HATE IT! About 10 minutes ago, I boiled some eggs to be used on top of a salad. I boiled them well over 3 minutes, then took them off the stove and put the pot in the sink, and let cool water overflow the pot, so I was left with lukewarm water. I peeled them right away, being sure to peel the "membrane" under the shell also. If you are peeling below membrane level, the shell will come off.

You answered your own question. Fresh eggs will not peel without part of the egg coming off with it.
I suggest you leave them in your refrigerator for 2 to 3 weeks before you boil them. Then they will shell out very easy.

put a drop or two of vinegar in the eggs while boiling..let them cool by putting them in a bowl of cold tap water...bop the nose ot the egg and the bottom then work around one side cracking the shell then with your thumb gently press on the side of the egg till the inner membrane gives way... the shell will come right off

Fresh egg just do not boil well.
It has to do with the membrane.
I have heard of wild story's about plunging them into Ice water immediately and and etc.
Only use store bought or set your fresh aside for several days to age.
Most store bought are at least a week old.
And unlike Budweiser they have no "Born On Date"

Use very fresh eggs;
Put the eggs in cold water immediately after boiling;
Crack the eggshells all around and let soak in the cool water for a few minutes before peeling;
Make sure to peel them as soon as possible after cooking. Letting them sit in the fridge unpeeled will make them impossible.

Yeah, Just take the shell off gently without poking a whole in the egg. It's very easy just take your time.

i put my boiled eggs in cold water, then i tap the eggs on a board, but tap the egg all round so that the egg shell cracks all over then i peel the egg, then rinse in cold water to remove and loose egg shell. If the eggs are splitting they may not be cooked enough.

Boil it for a while, then put it in cold water, and then gently tap it with a spoon and gently roll it on a hard surface.

you have to gently tap the egg on the side of a bowl,then gently lift off a piece of the shell and be carefull as you go along,you just have to peel off small pieces at a time until you have the whole egg free of the shell,its tedious work but if you are careful enough you will have hardly any trouble.

Put salt in the water when you boil the eggs and after emptying the hot water once boiled, immediately add cold water with a few ice cubes into pot. They will peel very easily.

I once bought one of those gadgets ( " The Eggstractor") that are supposed to peel the egg for you easily..the gadget didn't work but the recipe for hard boiled eggs they suggested works every time!

Put eggs (not fresh ones) in saucepan on the stove. Cover them completely with water. When water starts to boil have them boil for 7 minutes. When they are done boiling, have a sink or big bowl full of ice water ready. Drain the eggs from the hot water and have them sit in the ice water for no less than 10 minutes. I promise you the shells will slide right off!
