INGREDIENTS:
3 tablespoons curry powder
2 tablespoons soy sauce
2 cups mayonnaise
4 (3 lb) broiler chickens, cooked, meat diced
1 pound fresh seedless grapes, halved
2 cans water chestnuts, drained, sliced (8 oz each)
6 ounces sliced almonds
2 cans pineapple chunks in juice, drained (12 to 14 ounces each)
PREPARATION:
Mix curry, soy sauce, and mayonnaise; toss with other ingredients. Chill before serving.

Fruited Chicken Salad
INGREDIENTS:
2 cups chicken, cooked, cubed
3/4 cup celery, sliced
3/4 cup seedless grapes, green, sliced
3/4 cup fresh peeled and cubed peaches
1/2 cup mayonnaise
1/2 cup sour cream
seasoning salt, to taste
PREPARATION:
In a large bowl, combine chicken, celery, grapes, and peaches; toss gently. Mix mayonnaise and sour cream together and pour over the salad. Add seasoning salt and mix gently. Taste and adjust seasoning. Refrigerate until ready to use. Garnish with fresh sliced peaches, whole grapes, and parsley if desired.

Jamaican Jerk Chicken Salad
INGREDIENTS:
1/2 cup prepared or purchased honey-mustard dressing
1 teaspoon finely grated lime zest
4 chicken breast halves without skin, boneless
1 tablespoon Jamaican jerk seasoning
2 large fresh mangoes
10 to 12 cups mixed greens
PREPARATION:
Stir together honey-mustard dressing and lime zest. Cover and chill dressing while preparing chicken.
Rinse chicken and pat dry; sprinkle with the jerk seasoning In a large skillet cook the seasoned chicken in hot oil over medium-high heat about 6 minutes on each side until browned and no longer pink. Thinly slice each chicken breast.
Arrange warm chicken and mango atop greens on four plates; drizzle with the honey-mustard dressing.
I make mine with a little chilli powder and cumin, add chopped granny smith apples or grapes to take the bite out of it. It really is delicious.

We make a buffalo chicken salad that rocks the boat.
It is a pasta salad, but you can leave the pasta out if you want.
You will need:
Diced chicken
Celery cut in a dice - how ever much you want
Carrot cut in a dice
Green onion - cut
Red Hot or Tabasco Sauce - Wing sauce even
Bleu Cheese Dressing
Shredded Cheese of your choice (we add extra bleu)
Pasta if you like.
Mix it all together - adding garlic powder or any other spices you like. We never measure - just add until we get the taste we are looking for!
Chipolte Chicken Taco Salad...
Ingredients
Dressing:
1/3 cup chopped fresh cilantro
2/3 cup light sour cream
1 tablespoon minced chipotle chile, canned in adobo sauce
1 teaspoon ground cumin
1 teaspoon chili powder
4 teaspoons fresh lime juice
1/4 teaspoon salt
Salad:
4 cups shredded romaine lettuce
2 cups chopped roasted skinless, boneless chicken breasts (about 2 breasts)
1 cup cherry tomatoes, halved
1/2 cup diced peeled avocado
1/3 cup thinly vertically sliced red onion
1 (15-ounce) can black beans, rinsed and drained
1 (8 3/4-ounce) can no-salt-added whole-kernel corn, rinsed and drained
Preparation
To prepare dressing, combine first 7 ingredients, stirring well.
To prepare salad, combine lettuce and remaining ingredients in a large bowl. Drizzle dressing over salad; toss gently to coat. Serve immediately.
1 tsp olive oil
2 chicken breasts, skinned.
Half a cup of French beans
3 firm ripe tomatoes, seeded and cut into cubes
2/3 cup plain yoghurt
2 cups multicolored pasta of choice (penne, farfel … or whatever is the `Fancy of the day’).
1 green chili, seeded and finely chopped
2 cloves of garlic, crushed
3 tablespoon chopped fresh coriander
? tsp ground black pepper
Salt to taste.
Put the oil in a hot pan and seal the chicken breasts. Let them cook for about ten minutes, till they are all cooked and lightly browned. Remove and cut into strips. Chop the French Beans into 1 inch lengths and cook in boiling water for about 5 minutes. Refresh in cold water to retain the color.
Cook the pasta in a large pan with lots of boiling water. When done, rinse and keep aside.
In a bowl, mix together the yoghurt, curry powder, chili, garlic, and chopped coriander. Mix well. Then add the chicken strips and let it stand for about half an hour, till the ingredients get well acquainted.
Next, put the pasta in a large bowl and toss well with beans and tomatoes. Pour the mixture of chicken and sauce over this.
I've got a couple. One with pasta you can eat alone or withour pasta that can be eaten as a sandwich.
CHICKEN SALAD Favorite!
1 c. Mayonnaise
1 c. Sour Cream
1/2 tsp. MILD Paprika
2 c. cooked chicken, diced
1 c. Vidalia Onions, coarsely chopped
use less onions if vidallas are not available.
6 oz. Medium Pasta Shells, cooked, and cooled.
(Rotini or Rainbow Spirals adds color)
1 c. Green seedless grapes, halved. (Optional but great!)
1 tsp. red pepper
Combine chicken and onions. Mix together the mayonnaise, sour cream, pepper, and paprika. Pour over chicken, add pasta and toss lightly to coat the pasta. Serve on a bed of red or green leaf lettuce. Stuff into tomatoes or JUST EAT IT AS IS!!!!
CASHEW CHICKEN SALAD
3 c. cold cooked diced chicken
2 tbsp. white raisins
1/2 c. cashews, coarsely chopped (optional)
1/2 c. scallions
3/4 c. mayonnaise
1 apple cored and diced
1/4 c. sour cream
1/2 c. chopped celery
2 tsp. curry powder
2 tsp. lemon juice
cayenne pepper and garlic salt to taste.
Combine first 6 ingredients in a large bowl.
Blend mayonnaise, curry powder, and lemon juice;
mix with chicken and season to taste. Chill..
Tip: Serve in pineapple boats or on lettuce leaves.
Or you can keep it very simple. Chopped onion, celery, and mayo. Add pecans if you like. Mix and eat.
I make chicken salad with Ricotta cheese and only a little bit of mayo. I also use minced onion and celery, and shredded carrot. Add cumin, paprika or chili pepper for the kick. Family and friends tell me it's the best chicken salad they've ever had.
season up some chicken breasts on bone, till its done. peel it off bone, discard the skin then chop the meat into bite sized pieces. season up with salt, pepper and old bay seasoning. add mayo and chopped celery. chill. and eat.
Okay, here's something a little different.
Take your cooked chicken breast and dice it into little pieces.
Then take your favorite vegetables and do the same(celery, carrots, onions, radishes, green and red peppers,parsley,etc.).
Now mix it all together in a nice big bowl. Add your mayo, but make sure not to add too much. You want it a little dry, as your vegetables will leak some of their water content. Now add just a little Dijon mustard. Not too much, as you don't want it to be overpowering.
Now here's the twist.
Take some cinnoman, and add enough, (not too much, because it won't take a lot, ), to give your salad that nice aroma and taste of the cinnoman. Now add just a little sugar, to add to the flavor, and a few capers. (You can buy them at your local grocery store, but be careful on how many you add, their pretty sour!)
The best way to serve this is using a pita bread as a pocket, and topping it off with bean sprouts, and green leaf lettuce.

Try using Thai flavours in your chicken salad. Fish sauce, fresh chilli, thai basil, lime juice, and fresh coriander. Balance the flavours to your own palate. Play around. I'm sure you will come up with the best.
