Cook your ground beef in a frying pan, drain it and add the seasoning.
On a plate, make a layer of tortilla chips, a layer of cooked beef, and a layer of shredded cheese. We use shredded Monterey Jack and Velveeta cut into small cubes.
Put the whole plate in the microwave, and cook until the cheese melts.
If you want to do a larger batch, like for a family or party, make your layer on a large cookie sheet and bake in a 425 degree oven until the cheese melts.
Cheese stays melted when I do it this way.
if you go to a store like SAM's Club, the sell this aged cheddar cheese that you put on the stove and you can add a little bit of milk if you find it too thick. they also sell a different type in the chip aisle of most grocery stores. It comes in a jar and that one is ready to eat. oh and any tortilla chips will do
You can buy a jar of nacho cheese sauce at the store near all the Mexican food. Or you can just melt your own Velveeta and add a bit of milk. Velveeta melts really well and stays melted.
Use Velveeta Cheese instead it won't get hard or you can make the meat and cheese as a dip then pour it onto the chip...
Try this one...
Nacho Cheese Dip Recipe
1 (32 ounce) package Velveeta cheese
1 lb hamburger meat
24 ounces pace mild salsa
1 lb tortilla chips
1. Brown hamburger meat and place in crockpot.
2. Cut up block of velveeta into 1 inch cubes and place in crockpot.
3. Pour salsa into crockpot.
4. Stir ingredients together and turn crockpot on low for 1 1/2 hours or for 45 minutes on high.
5. Serve with tortilla chips
***You don't have to use a crockpot you can microwave the ingred. except for your meat or you can do the stove thing.
go to a mexican market they should sell nacho cheese in a can. also buy 1 pound of carne asada marinated. bbq the carne and enjoy it on the nachos. wanna hear something funny.

Taken from NACHOS RESTAURANT (Don Ignacio
Fernandez) the originator of NACHOS in Piedgras Negras, Coahuila, Mexico. He showed me how to make them 40 years ago. The story he told me was about three women who were shopping came to his restaurant at closing time and wanted something to eat. He suggested a Hors D'oeuvre, and created this:
REAL NACHOS Favorite!!!!
6 Corn Tortillas
1/4 c. Oil
1/4 lb. Cheddar Cheese
Sliced Jalapeno Peppers
1. Cut tortillas into quarters.
2. Heat oil in a skillet and fry wedges until crispy.
(careful! while hot they will still be pliable)
3. Drain on a paper towel.
4. Put on a cookie sheet.
5. Put a slice of cheese on each. Don't let cheese hang
over sides of the tortilla or it will drip on the
cookie sheet and be hard to remove.
6. Put a slice of Jalapeno on top of cheese and chip.
7. Put into oven at 350 degrees for 10 minutes or until
cheese melts.
If you want to add hamburger on top you can. And delete the pepper.
Today, instead of doing the original thing, I use restaurant sytle corn chips. Brown up a little hamburger.
In a glass plate, put the chips on the plate, cover with cheese and meat and nuke in the microwave. I like to put Pico de Gallo on top too! But you didn't want any thing else, but for other readers I'll include it.
Pico de Gallo
1 RIPE tomato or 3-4 RIPE Roma tomatoes diced
1/2 onion (vidella is best) diced
1 serrano seeded and vained minced
1/2 cup cilantro chopped
1 tbsp. Olive oil
Salt and pepper to taste
Mix together and eat.
it depends on the cheese. try one of those double boiler pots
