Need an idea for a side dish?
My husband has been craving fried Spam and buttermilk biscuits for supper. (His grandmother used to make this for him when he was little). While I admit, I'm not too thrilled about cooking this, I'm going to fix it for him tonight. What's something good to go with it??? I'm not a big Spam fan, so I don't know what's good to go with it.

How about macaroni and cheese? Then you won't have to eat the spam.
For an old-fashioned supper, I'd be tempted to go with something simple like carrots or green beans. Then again, a scalloped potato dish would be delicious.
deviled eggs, brocolli, spinah, ask him what grandma used to cook with it... this is hard for me because i don;t have any good memories of spam.
you can cut up some fish (walley or perch) into 3 inch by 1 inch strips, wrap them with a strip of bacon, throw them on the BBQ until the bacon is crisp and brush with a bit of chicken and ribs BBQ sauce
it's quick and easy and I know it sounds a bit off, but it really is a great mix.

My B-I-L is a huge spam fan. He always has fried eggs and Spam.
To counter-point the saltiness of the spam I definitely would have a side of something sweet like carrots simmered with brown sugar and a little butter, baked yam/sweet potato with cinnamon and butter, a good quality and generous serving of apricot, blackberry, cherry or strawberry preserves.
Easy Breezy Casserole [3 serv; ready in 40min]
3 skinless, boneless chicken breast halves - cooked and cubed
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup mayonnaise
1 cup cooked macaroni
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl combine the chicken, soup, mayonnaise and macaroni; mix well and spread mixture into a 9x13 inch baking dish.
Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes, or until cooked through
