What are some quick vegetarian recipes?!


Question:

What are some quick vegetarian recipes?

I want something that takes less than 45 min. and is low carb.
I don't like spicy food.


Answers:
cooked white rice, black beans (rinsed), corn, salsa, sour cream....and anything else you'd like to add...

White beans, minute rice, yellow corn, chopped red bell pepper, chopped sweet maui onion, and any salad dressing you like. Season to taste.

since it's grilling season I would slice small yellow and green squash in half,thinly sliced eggplant,mushrooms and red bell peppers,toss in olive oil,salt and pepper.grill til tender turning once or twice,remove to a lg bowl and drizzle with balsamic vinaigrette

Tofu crumbles that look like hamburger meat use it on spagetti but wait till last minute or it will melt and won't taste meaty.

OATMEAL PATTIES!!

They're made to taste like meat patties but are very GOOD!! and I'm not even a vegetarian!!

3 c. oatmeal
6 eggs
1 med. onion
1/2 bunch green onions
5 stalks celery, chopped
seasoned salt (optional)
salt
pepper
1/2-3/4 cup of oil for frying

* Mix all ingredients first (excluding eggs). Mix well.
* Add eggs and mix.
* pre-heat skillet with oil at 350-deg (med-hi heat.)
* Use a big serving spoon to scoop batches of mixture into
frying.
* Fry until golden brown then flip until other side is browned.
* Repeat!!

Once all patties are made, you can make your own gravy or buy gravy packets to go over your patties!! I prefer the country gravy packets!! It would go perfect with a side of mashed potatoes or rice!!
