Grill and smoker?!

Grill and smoker?

1st time using a smoker and i can not keep the heat above "warm" i've got almost a whole bag of charcoal in it, what do i do to keep the heat at "ideal"?


Answers:
I don't know which brand you bought, but it sounds like you have the fire pit at the level usually used for smoking. Can you move the pit up without burning yourself.

And go back and re-read the directions while you're waiting for the fire to go out.

Check List:
Is the temperature outside above 65 degrees
Is it windy
Is the heat pan inserted into the smoking chamber on the brackets
Is the inspection door closed
Is the lid on
Is the thermometer working (pop it out and put it in the oven at 300)
Is the charcoal lit
Every one of these steps are all the functions of proper smoking and heat control. For grilling move the heat pan directly under the grill grates on the mounting brackets. When grilling the thermometer has nothing to do with surface temperature
