I used to par-boil country ribs before BBQing. Not any more. For roasts and ribs its Low and Slow does it. 10 lb. box 2.5 to 3 hours in 250 degree oven or outdoor grill or until internal temp reaches and holds between 190 and 200 degrees. This gives the heat heat and time to break down the collagen and the tough skin on the inside of the ribs. Use a good KC dry rub before starting.

If they are in a box then read the label. However you should never boil ribs even if the box or someone told you to do so.

Boiling meat makes it tough!!
Put them in a roasting pan and bake, covered, at 350 degrees for about 1 1/2 hours.
Then put them on the grill with BBQ sauce (or baste with sauce in the oven).

NEVER boil to pre-cook meat, unless you are making beer-brats!

Don't boil your ribs. If you feel an overwhelming desire to put them in a pot of water, go right ahead, but gently simmer them, don't boil. But beware: all the delicious flavor from your ribs will be left in the water. I don't recommend boiling or simmering. If you want the full flavor of the meat, just cook them low and slow in the oven or in a smoker.

This is what you should do. Wrap each rack of ribs in foil leaving one end of the foil open but long enough to close when you are ready. Pour 1/2 can of beer mixed with a teaspoon of bbq seasoning, any kind you like and 1 clove of crushed garlic along with 2 tablespoons of vinegar, preferably cider vinegar, into open end of foil. Wrap the open end up very tight so no air can escape anywhere in the foil pouch. Bake these at 325 degrees for 2 hours. Take the ribs out of foil and save all juice in foil and pour into a sauce pan. Add 1 cup of brown sugar, 1/2 cup katsup and 1/4 cup mustard. Cook together until it becomes thickened like a bbq sauce. Place the ribs on a cookie sheet and baste in the sauce and place under broiler or hot oven or on the grill. Cook just until glaze turns dark but be careful not to burn. This way gives you the benefits of pre boiling your ribs without losing any flavor.
