A good rule of thumb for cooking corn is the shortest amount of time to cook it, the sweeter, more tender, and less mushy it will be.
If I get them from a farmer's market, where I know they were just picked, I usually strip and clean them, wrap in a moist paper towel, and nuke it for about 1-1 1/2 min. That is enough to make it warm but retain the taste.
If boiling I would plunk it in for no more than 3 minutes or 4 minutes. For years I followed that typical 10 min instructions and couldn't figure out why they never tasted fresh and were mushy. Seems most of us were taught to overcook em!
And definately don't cover...that will just enhance the breakdown of the corn into mush lol. And I do agree, the grill adds a nice flavor, but isn't always an option. But if you do grill make sure it's not directly over the flame, for all the reasons mentioned above. Try it yourself and see--the difference is amazing!
I never boil it I sprinkle with Old Bay, dabs of butter and roll in aluminum foil and place on the grill for 10 minutes.

I prefer to grill mine as well, rubbed with fresh herbs mixed in butter, then sealed in foil. When I do have to fix on the stove, bring water with a sprinkle of salt to a boil, then add corn. Boil for 5 minutes, then turn off heat, cover pan & let sit for 5 more minutes......Serve with homemade herb butter & a sprinkle of salt!!
I do rolling boil for one hour, no cover, add water as needed. Put butter in water. Try it.
I've always covered my pan. My mom did, so I do. I have no idea why. Anyways, just put the pan on high heat and cook for about 5 minutes. I just made some today and it turned out fine. It wasn't mushy at all.
I never cover it and I let it start out at high boil then put it to medium I also add tbsp sugar in water and it makes the corn real sweet and good with real butter. Darn it ya made me hungry! I am supposed to be on a diet hahaha just kidding
When covering it , it is your own perosnal choice to do so,
the heat shoud be at medium or high!
Fine Whine is right, shortest time possible, in Louisiana we boil corn with our seafood and usually put the corn in about 5 minutes before we turn the fire off, then let it soak for 15-20 minutes.
