i dont like salsa or that pico de gallo stuff, i had one at applebees a few weeks back and i loved it... i think it had peppers and it had lots of cheese..... can anyone help me??

I have a quesadilla maker and I put shredded tyson chicken in it with chiles and 2 kinds of cheese some onion and let it cook the cheese I use is pepperjack and colby
CHICKEN QUESADILLAS
12 ounces cooked chicken breast halves
2/3 cup shredded monterey jack cheese
1/4 cup finely chopped green onion
8 (8") flour tortillas
1 cup salsa
1 cup sour cream
Combine chicken and salsa in bowl. Divide chicken mixture, cheese and green onions evenly among 4 tortillas.
Cover with remaining tortillas. Heat one tortilla stack in large skillet over medium heat for 2-3 minutes.
Turn tortilla over and repeat for another 2-3 minutes or until cheese is melted. Repeat with remaining tortilla stacks.
Serve with sour cream.

EASY CHICKEN QUESADILLAS
flour tortillas
1 can cheese soup
1/2 cup thick and chunky salsa
1 lb boneless skinless chicken breast
Cook chicken as desired and shred meat into a bowl. Combine salsa, chicken meat and cheese soup. Spoon 1/3 cup of mix onto tortillas. Fold, place on baking pan.
Bake on 350°F for about 7 minutes.
Pptional: Melt butter in a skillet and place tortillas in butter before baking.
Enjoy! These are a family favorite. We top them with sour cream, lettuce, and tomato.
I have a recipe for awesome chicken quesadillas but it does have all that salsa, pico and pepper stuff. So you could change it:
Use one of those rotisseree chickens from like walmart that are only like $4. shred all the meat off and then use black beans, green chillies sautee'd onions and curry. put between two grilled tortillas with lots of cheese that you like. then top with sour cream.
This recipe is also excellent on nachos.
A real simple recipe is to use flour tortilla's, smoked gouda, chicken, diced canned green chilli peppers, diced tomatoand serve with sour gream if you want.
My boyfriend made really awesome barbecue chicken quesadillas. He didn't have a recipe, but just kind of threw it together by sauteeing onions and green peppers (jalepenos when we had them), cooking diced chicken in olive oil and adding barbecue sauce towards the end. Then he put cheese on a flour tortilla, added the chicken + veggies, more cheese, another flour tortilla. Popped it in the oven and kept checking for it to turn golden. Really good and totally easy.
