Balsamic & Herb Chicken


Ingredients
6 boneless, skinless chicken breasts
Salt and pepper to taste
1 - 2 Tbsp. Spinach & Herb Dip Mix
1 cup flour
4 Tbsp. Balsamic & Basil Dipping Oil
1 1/2 cups chicken broth
1 tsp. cornstarch
1 Tbsp. water

Directions
Sprinkle chicken with salt, pepper and Spinach & Herb Dip Mix. Dredge chicken in flour. Put Balsamic & Basil Dipping Oil in large frying pan and warm on medium heat. Add chicken; sauté 5-7 minutes until golden brown. Remove chicken to platter and whisk chicken stock into pan. Return chicken to pan; reduce heat to low and simmer 10-20 minutes (depending on thickness of chicken) until juices run clear when chicken is pierced with a fork. Transfer chicken to a warm platter. Combine cornstarch and water, whisk into simmering broth; stir and cook on medium until thickened. Makes 6 servings.

i don't have specifics because i don't know what your family likes but you can go to kraft kitchens and look up some stuff. there are all kinds of things for all kinds of tastes there.

well im a chef with a wife and 2 great kids and here's a good idea that the kids really enjoy. try having days set as themes. for example, tuesdays can be mexican food, and wednesdays as seafood. it will keep from becoming confused on what to make and let the kids expirience a variety of food.

This recipe is a winner. Whenever I make it I never have any leftover because my son and my husband both have second and third helpings every time.

Chicken Tortilla Soup
2 skinless, boneless chicken breasts
1/2 teaspoon olive oil
1/2 teaspoon minced garlic
1/4 teaspoon ground cumin
2 (14.5 ounce) cans chicken broth
1 can black beans, rinsed and drained
1 cup chopped onion
1/2 teaspoon chili powder
1 can of stewed tomatoes (Rotel is best, but you can use any brand if you don't have Rotel)
8 ounces corn tortilla chips
1/2 cup shredded Monterey Jack cheese (optional)
DIRECTIONS
In a large pot over medium heat, saute the chicken in the oil for 5 minutes. Add the garlic and cumin and mix well. Then add the broth, black beans, onion, chili powder, and stewed tomatoes. Reduce heat to low and simmer for about 20 to 30 minutes.
Break up some tortilla chips into individual bowls and pour soup over chips. Top with the Monterey Jack cheese and a little sour cream. I

Chicken Fetchunie Alfredo

Chicken kabobs- marinate chicken, then cook (or grill if the weathers nice) with pineapple, mushrooms, onions, peppers and anything else that you like. They're really good!

How about Mac and Cheese? add some frozen peas and a can of drained tuna. top with crushed potato chips and viola!

Cheese or chicken and cheese quesadillas. Easy. Spred refried beans on tortilla shells, put chicken and shredded cheese all over, top with another tortilla and either bake in the oven till cheese is melted, or grill and flip. Cut into wedges, top with salsa and sour cream and sliced olives. Yum - and quick!

I soaked chicken quarters in chiavettas overnight and grilled it over a bed of hot coals. I also made potato salad last night so it was nicely chilled and full of flavor by the time dinner was ready. I threw together a nice garden salad with romaine, spinach, cherry tomatoes, sliced cucumbers, and chopped baby carrots. For desert we had straberry shortcake topped with whipped cream! It was very yummy and a great meal for a hot day.

I don't really have a recipe for the potato salad. But it includes potatoes, diced red onion, sliced green olives, bacon, chopped celery and mayo.

I used this recipe for the Strawberry Shortcake (it's fantastic!)

3 pints fresh strawberries
1/2 cup white sugar
2 1/4 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons white sugar
1/4 teaspoon salt
1/3 cup shortening
1 egg
2/3 cup milk
2 cups whipped heavy cream

Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.

Chicken.
Poach your chicken pieces in some stock and set aside, until cool enough to handle, and de-bone.
Pasta.
Place in salted boiling water and cook until you get the degree of cooking you like.
Penne or Elbows will do very well here.
Sauce.
Make a normal white sauce and add some grated tasty cheese, remove from heat and stir until it is smooth.

Combine everything and place in an oven proof dish, sprinkle with more cheese and bake until it is bubbling and the cheese has melted and started to brown.
