Peel them and cut into sticks and store in a glass jar with a lid on and they will last several days. You can do the same with celery and always have something healthy to snack on.

you should leave the peel on and don't put them in water they will keep for weeks in the refrigerator just put them in some plastic or something like that

They won't mold just use within 2 days and it ok to peel them.

We use dried carrots and other dehydrated things in soups (and Ramen, specifically) when we are camping sometimes. What i would do is not rehydrate them until you need to use them, and when you do need to use them, boil them. soaking them in water might work, but boiling will be more effective, and they will turn out better. Boil them for maybe about five to ten minutes, and if they aren't soft by then, let them sit for a while in the hot water.

carrots last quite a while but you can refresh them in ice water
