i use onions, garlic, crushed red pepper, salt and regular pepper with butter. also if i have them stir fry peppers in it. not the hot kind though.

I just slice mine thin, leave the skins on, fry them in a little oil and butter til crispy.

I eat my fried potatoes for breakfast. I dice my potatoes, rinse them and season them w/ seasoning salt,minced garlic, diced onion,pepper, and diced peppers. They're wonderful / eggs and bacon and tortillas and salsa.
i eat mine with eggs i fry the potatoes add salt , pepper, and garlic poweder then add the eggs to the potaoes scramble and done.
Another twist on the traditional 'frying'. Cut the potatos to your liking, and then dip in a bowl with a beated egg. Throw then into the oven on a pan. While not 'fried', the egg gives them the texture of french fries, while not having the negative effects of being fried. Season them as you like. Just an alternative.

INGREDIENTS
2 slices bacon
2 tablespoons butter
1 tablespoon diced onion
4 potatoes, peeled and sliced
salt and pepper to taste
2 eggs
1/2 cup shredded Cheddar cheese
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.
Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper, cheese and bacon. Continue cooking until eggs are firm and cheese is melted.
I just fry mine in vegetable oil and add dallops of butter across the top with salt, black pepper, and a little dried onions. I like to dip mine in ketchup. I fry them until they are cripsy. YUMMY!! Ocassionally I will add eggs and sausage or bacon and cheese for breakfast.
I usually have them for breakfast. I start with leftover baked potatoes. I dice them and cook them in olive oil with chopped onion. Very good on their own or in breakfast burritos.
I like smother fried with onions and bacon.....
