Cucumber Salad Recipe?
My grandmother used to make cucumber salad. I have looked it up and can't really find one that sounds like what she made. I am pretty sure, but not positive that it did not have mayo in it. I do know that it had cucumbers, and white or yellow onions in it, and vinegar. Does anyone have any kind of recipe that sounds something close to that? Any help would be greatly appreciated! Thanks in advance!

Ingredients:
7 cups cucumber, sliced
1 cup onions, thinly sliced
1 tablespoon salt
***Vinegar Solution***
2 cups sugar
1 cup vinegar
1 teaspoon mustard seeds
Directions:
Sprinkle cucumber and onions with salt. Let set an hour or two. Mix vinegar solution.
Bring vinegar solution to a boil, then let cool. While vinegar cools, squeeze liquid out of cucumbers and onions and let drain. When vinegar solution is cooled, pour over cucumbers and onions. Refrigerate or freeze. can be doubled or tripled

Ingredients for Cucumber and onions
5 Cucumbers, sliced
2 Large onions, sliced
1 c. Sugar
1 c. Vinegar
1 1/2 c. Water
Preparation :
Mix all ingredients in bowl and chill.
I make mine in a large canning(quart) jar. Alternate layers of cucumbers & onions. When it is full add enough vinegar to make the jar a little more than 1/3 full but not half. Next add about 1/2 - 3/4 cup sugar(more or less to taste). Add 1 t salt & 1/2 t pepper. Finish filling the jar with water and place lid on the jar and shake till it is dissolved and mixed. Chill in refridgerater overnight, shaking several times.
It needs to sit awhile before it will taste right so don't assume when it is first mixed that it needs more salt or sugar. It will taste different the next day. After that if you feel it needs more vinegar or sugar for your taste add it then.
I remember my mother & grandmother making this every summer & it was a much awaited part of the summer eating! Nothing else like it on a summer day!

Cucumber salad is one of my favorites and does usually have onions. I like to cut the cucumber in half lengthwise and then cut slices. Tomato slices are great to add too. Slice sweet onions as well. Fresh DILL is a key ingredient if you can get a hold of some or use dry if that's all you have. Just chop it and add it in with the rest of the veggies. Any kind of vinegar will work. I like balsamic or rice vinegar but apple cider or anything will work. Extra virgin olive oil is good as well. I usually add 50/50 oil and vinegar but you can experiment . I mix them up in a plastic container with a lid so I can shake it up a little Add enough liquid to cover at least the bottom of the container. Add salt and pepper and a pinch of sugar. Shake it up lightly to coat everything. Let it marinate for a few hours in the fridge taking it out to shake it every once in a while. Also try adding yogurt or sour cream to the liquid before marinating for a creamier version
Cucumber And Onion Salad
1 cucumber, sliced
1 small to medium onion (I prefer red), sliced
? cup red wine vinegar
? cup water
1 to 1? tablespoons sugar
? teaspoon mustard seed
?-? teaspoon each, salt and coarse ground pepper
In a medium bowl, separate onions into rings, add to cucumber slices.
Dissolve sugar in water, add wine vinegar, mustard seed, salt and pepper.
Pour over cucumbers and onions and toss
Allow to marinate for at least an hour before serving.
Cucumber Salad
3 large cucumbers, peeled, thinly sliced
1 cup white vinegar
3/4 cup water
3/4 cup sugar
1 teaspoon salt
dash ground cayenne pepper
dash dried parsley flakes
1/8 teaspoon black pepper
dash dried leaf basil
Combine all ingredients except cucumbers; heat until sugar melts. Pour warm mixture over cucumbers. Store covered in refrigerator.
I slice up seedless cucumbers, vidalia onion, I mix up 1 cup sour cream with 2 tbsp white wine vinegar, 1 tsp salt and 1/2 tsp pepper, I pour this over the cucumbers and onion. Sometimes I use red wine vinegar, which does turn the color but it tastes just as good. Adjust seasoning to taste, you may like more salt and pepper after tasting.
