How do you make easy Asian chicken broth?

It always tastes so yummy in restaurants. Its like a magic cure for a hangover too? recipes very welcome. thanks!


Answers:
The Chinese version is even simpler, normally a small lean chicken is boiled slowly with a piece of ginger and spring onion. But then the stock is mixed with a bit of soy sauce and rice wine.

Asian chicken and wakami broth

You need:
Chicken, stock, vegetables, ginger, noodles and wakami.

2lt good quality chicken stock
2 chicken breasts
? bunch spring onions
2 tsp fresh ginger, finely chopped
1 clove garlic, finely chopped
300g bean sprouts
1 carrot, shredded or julienned
300g wakami*
? packet of soba or Japanese noodles
optional sesame oil and toasted sesame seeds
*Spinach, bok choy or any Asian greens can be substituted for the wakami. These quantities should serve four.

Method:
Soak the wakami in cold water for 10 minutes, drain thoroughly and then shred finely. Cook the noodles (if using) in boiling water and refresh under cold water. Wash and slice spring onions. Place chicken stock into a large saucepan and bring to the boil, reduce heat, add a third of the spring onions, the finely-chopped ginger and garlic.

Trim the chicken breasts of all visible fat and place into the chicken stock. Poach gently until cooked. Remove the chicken from the stock and shred the meat. Strain the stock into a clean saucepan and reboil. Add the chicken, bean sprouts, carrot, shredded wakami, noodles and remaining spring onion. Cook until only heated through.

Serve immediately, garnishing with a drop of sesame oil and toasted sesame seeds.

Truthfully,
Make it like you do at home but, use chicken feet! Yes chicken feet! You can find them at many oriental stores. Chicken feet when boiled have a stronger and better chicken flavor. I learned this from an Chinese cooking instructor at a community college I went to. And the feet do make a better broth than just boiling a whole chicken. It sounds gross but the feet you buy have been cleaned very well. Just toss them when you're all done making the broth.
