Uncooked or pink pork?!


Question:

Uncooked or pink pork?

I recently had a rack of back ribs from a well known chain restaurant. One of the end pieces, the meat was pink/darker red. I ate it anyway; should I be worried? I know the internal temperature of pork should be 170F and pork should be cooked until it is no longer pink. How worried should I be? Thanks.

First of all, I know of no one using msg that penetrates meat to the bone and would just colour the meat just at the bone. Second, don't assume that the bbq pork was slow cooked in a smoker, as it is usually cooked on a flame grill and coated with sauce. Your lack of worry would be more reasonable because of the fact that in countries like Canada, there has been no reported case of trichinosis in like 30+ years. This is also true of other developed countries. I cook my pork roasts medium rare and it tastes great. When it comes to eating things that have the potential of making you sick, please refer to a more informed media like medical journals or ask your doctor. Too many people with too many opinions ( this includes mine), you need facts and makeup your mind only on these.

Probably not, the bar b q process is a slow cooking process that spreads the spices/sauces into the meat. In contests ribs are actually scored on their coloration. The dark part may just mean it got more sauce.

if it was slow cooked or smoked, it will have different layers of pink. sometimes from smoke rings, sometimes that's just the way it looks from slow cooking.

if you feel ok, don't worry about it. if it happens again and you're that concerned, ask or send it back. don't just eat it and wonder. you're paying for it, you can send it back.

Eating pork with a little pink is ok now. The reason it used to need to be cooked well done is because farmers would feed the pigs scraps from local restaurants. Now most pigs are fed a grain diet there by providing less harmful bactiria. So eating pork medium rare is just fine.
