How to make VADA PAU ?????

I Want to make vada pau at my home, plz send me the receipies. preferably Ahmedabadi version - not mumbaiya version................

Ingredients
250 gm potato..boiled, skinned and mashed
1 onion chopped fine
1 inch ginger chopped fine
a small bunch of coriander leaves chopped
6 green chillies chopped fine
1/2 t spn mustard seeds
1 tbl spn oil

for the batter
1 cup of besan(chickpea flour)
1/4 cup rice flour
1 t spn baking soda
1 t spn chilli powder
a pinch of asafoetida powder
3/4 cup water
salt.

oil for deep frying

Mix all the ingredients for the batter and make a smooth batter. Keep aside.

In a fry pan, heat oil, add mustard when it finished spluttering add the ginger, onion and greenchilli. Saute till the onion is light brown. Take it off from fire. Add the onion mix, coriander leaves, salt, turmeric and mix well with the mashed potato. Make in to small patties 2 inch in diameter and 1/2 inch thick.

Heat oil for deep frying. Dip the potato patty in the batter, coat well and deep fry till it is golden brown. Serve hot with chilli sauce.

Cooking Time : 15 minutes
Serves / Makes : serves 3 kids

Ingredients

1) 1 big sweet potato
2) 1 cup besan atta to make batter
3) 1 cup chopped spinach/methi leaves
4) salt,turmeric,chili powder,cumin according to your taste
5) oil for frying
6) 3 pau/ buns
7) 2 tablespoon of lemon juice
8) slices of cheese(optional)

Method
1) Peel the skin off the sweet potato and boil it in pressure cooker/microwave till soft.
2) Mash the potato mixture (after draining the excess water )and add 1/2 cup chopped spinach/methi leaves and ingredients in [4].Make sure all are mix together well.
3) Prepare medium consistency besan batter using water and salt.Add another 1/2 cup spinach/methi leaves to this batter.
4) Make big balls of the sweet potato mixture and dip it in prepared batter to deep fry it.
5) Once fried,let the vada cool down.[It can be eaten by itself with chutney/tomato ketchup]
6) Get fresh pau and butter it both sides to be toasted on tava.Optionally Add slice cheese to hot pau so it gets melted.
7) Add the prepared vada in between your pau with your favourite chutney/ketchup.

Tips
1) Vada can be prepared ahead of time ( 1 or 2 days in advance) or optionally prepare the boiled mixture ahead of time,whichever works for you.
2) Sweet Potatoes are:
High in Fiber (4g - one medium sized sweet potato)
Fat Free
Low in Sodium
Low in Cholesterol and Saturated Fat
A Good Source of Vitamin B6, Vitamin A and Vitamin C

Vada

Ingredients:

1/2 cup urad daal
1/2 cup moong daal
1 Onion finely chopped
1 tsp Ginger
1 or 2 green chilies finely chopped
Salt to taste
1/4tsp baking soda

Method:
Pick, wash and soak daals for 3-4 hours.
Grind them coarsely in a blender.
Now add onions, ginger, green chilies salt and baking powder and mix well and set aside for 5 minutes.
Heat oil in a pan or kadhai and deep fry a spoonful of batter till golden

Buy Pau from market, cut and spread chutney on it and put vada inside to make sandwitch.- Vada Pau.
