INDONESIAN MEI GORENG (FRIED NOODLES)

4 pkgs. Ramen-style noodles
1 clove minced garlic
1/2 c. sliced onion (preferably the red variety)
1/2 c. sliced bell pepper
1 stalk celery, cut into thin, diagonal slices
1 carrot, cut into thin, diagonal slices
Any type sliced vegetables, suitable for stir-frying
2 eggs, scrambled and cooked
3 chopped green onions
Cooked shrimp, crumbled bacon, leftover roast (optional)
Sweet soy sauce (available at Oriental markets; oyster sauce can also be substituted)

Put a large pot of water on to boil. Meanwhile, open Ramen noodles and set enclosed spice packets aside. Break noodles into boiling water. Stir and cook only until separated, about 1 minute. Immediately drain in a colander and rinse under cold water. Sprinkle with the contents of one spice packet (and 2 tablespoons of sweet soy sauce, if you have it). Set aside.

For the next step, a large skillet, electric skillet, or large wok is needed. Take all the ingredients except green onions and stir fry in 3 tablespoons vegetable oil. A few drops of sesame oil added to this is delicious and fragrant. Stir and cook until vegetables are tender-crisp. Add eggs and meat. Toss until heated through. Add noodles, tossing and turning until thoroughly heated. Sprinkle with chopped green onions. Easy, fast, and exotic! 4 main dish and 8 side dish servings.

boil the noodles in water untill cooked and then fry them with a tiny bit of oil. try adding some spring onions and some sort of meat and add soy sauce.
