The other posters are correct. I work at RL. They actually put a buttery sauce on them after washing, then roll in salt, then bake. The salt helps to make them fluffy!
It is just salt. My first job was as a server at Red Lobster.
Wash your own potatoes and salt them when wet and when you bake or put them in the microwave, the salt gets all briny...i suggest you use sea salt or kosher salt, but iodized (regular table salt) will give your potato skin that consistency as well
I'm not exactly sure, but I rub a bit of vegetable oil and a tiny bit of salt on potatoes, then bake in foil. That seems to keep the skin softer, since the potatoes kind of steam inside the foil with a light oil rub. Be sure to pierce the potatoes before wrapping in foil so they don't explode in the oven.
I think connecvection ovens cook them better than a standard oven, used in almost all commercial kitchens, and when I get rich, I'm going to replace my oven with a convection/conventional oven.
Love those convection ovens.
I think they may use a little italian dressing on them
