Mac and Cheese, if i have no time.
If not, any other pasta in tomato sauce or pesto. I would suggest pesto, if you're gonna eat kinda late in the night, so your diggestion isn't that "heavy" while you sleep.

corned beef and cabbage, throw in some onions and if you like red potatos, carrots and beets ..........it is yummy!!!!

Meatloaf
Take either ground turkey or beef. I prefer turkey myself it holds in flavor better.
Mix in onion powder, garlic powder, salt and bread crumbs.
Put in a glass oven safe pan, cover with foil and bake at 450 until it is well done.

In the Summer and on warm days, I find it miserable to cook and eat a full hot meal, so I make Ceasar Chicken Wraps.

I get the extra large soft taco shells (wraps) which come in great flavors now, I like the sun-dried tomato with these, grill and slice some chicken breasts marinated in ceasar dressing, and make the ceasar salad. Then I roll them up in the shells burrito-style and my family loves them!

Its a mexican dish (hence i'm mexican)
- Dice 1 lb pork meat (season with salt and garlic powder)
- brown til almost crisp
- In blender puree 4 tomatoes, 1 jalapeno, small amount of onion, salt, garlic, 1 cup water
- add in skillet with meat...
-simmer for 30 minutes
meat will be tender and full great flavor

HOMEMADE CHICKEN CORDEON BLUE.
Anyone can buy it premade but making it is so much fun. Especially if you have children, they love it too!

For family of 4 (1 chicken per person)
1 pack of boneless chicken
1 pack of bacon
presliced mozzerella cheese
deli presliced ham
salt/pepper

Place two pieces of bacon on a plate. side by side slightly over lapping
then place the chicken on top of the bacon bottom side up
sprinkle a little salt/pepper for flavor.
take one piece of mozzerella cheese and cut it in half. put both pieces on but spread them out on the chicken.
Then take a piece of ham, rip into pieces and place on chicken.
then take another piece of bacon, lay it on top and then carefully roll from the top of the chicken down into a ball. You might need a toothpick to keep it together but I usually just trim the chicken to a nice thin piece to make it easier.

Put it in the oven on 350 for about an hour and twenty minutes!

ill have for my main corse ill have a bit of pasta with a hint of mint
and for desert ill have swiss roll with cream on top and then flake 99 on top of the cream

I take some veggies that i like. usually broccoli, carrots, peas and yellow beans,
cut up some boneless, skinless chicken
add some cheese soup and throw it in the oven (in a casserole dish) for as long as it take for the chicken to fall apart!

My favorite thing to make for dinner is, Turkey, mashed potato's and grave, with peas as a side. MMMMMMM

I buy frozen turkey breast. Put it with one can of chicken broth and one can of cream of celery soup in the Crock pot.
I cook it on the low setting all day. Make mashed potato's and peas. It is really easy and the turkey is tender and moist. Make your gravy by adding another can of cream of celery soup and thicken if necessary. Sometimes I will make Stove top stuffing also.

sun dried tomatoe alfreado lasagna with mild sausage and spinache

I never measure my homemade meals. Like Rachael Ray.

2 jars SDTA sause by progresso
1 box frozen spinache thawed predded dry
1 long round link of mild sausage casing removed and cooked like ground beef
1box lasagna noodled- not precooked ones
big ole container ricotta cheese
2 eggs
1/2 bag or more shredded mozzerella cheese


cook noodles, brown sausage, drain spinache. mix ricotta cheese, mozzerella, spinache, eggs. place parchment papre on bottom of lasagna pan. place 1 layer noodles down. process should be noodles,sause, cheese, noodles , sause, beef. continue till you run out of ingredients. Its an awesome spin on a great recipe that is usually boring. Men really love it.

I like making pork chops, fried potatoes, and macaroni and cheese. Everything is pretty easy. I coat both sides of the pork chops in a flour, salt, and pepper mixture. Then I mix up 1 egg and a teaspoon of worchestire sauce and coat both sides of the chops. Finally, coat both sides in bread crumbs and fry over low heat for about 30 -40 minutes. Peel and cut potatoes into pieces. Heat oil over medium heat for about five minutes. Add potatoes, salt and pepper and cook for 30 40 minutes. For mac n cheese: Boil water, add macaroni, drain when done. I use the velvetta block of cheese. I don't measure it out. Cut into cube pieces and add to macaroni. I add about a 1/4 cup of milk and return to stove. You can keep adding cheese to get it as cheesy as you like.

most grocery stores have preseasoned chicken Leg and thigh (connected). just thaw and toss in the oven. or even toaster oven. with rice .....

this is so simple for week night dinners, its my easy swedish meatbball recipe
For this recipe, you will need two 12 ounce jars of beef or brown gravy (I prefer brown), 1 pound of mushrooms (cleaned and sliced), butter, one large onion, Worcestershire sauce, all spice, two pounds of frozen meatballs, sour cream, and a 12 ounce bag of egg noodles.

Take your meatballs out of the freezer to allow them to thaw before cooking. Saute the mushrooms in 2 tablespoons of butter until tender. While those are sauteing, cut your onion into chunks. When the mushrooms are done, place them in your crock-pot. Then add the two jars of gravy, the cut onion, 1 tablespoon of Worcestershire sauce, and 1/4 teaspoon of all spice. Finally, stir in your two pounds of meatballs. Cover and cook on low for six hours, occasionally stirring. Cook the 12 ounces of egg noodles according to the package. When those are done, take 1/2 cup of the gravy from the crock-pot and place it into a medium bowl. Slowly stir in 1 cup of sour cream then return the mixture to the crock-pot and stir.

This recipe serves 8 - 10 people. Serve it with a vegetable like green beans or a nice salad and you have a great, simple dinner.

Grilled sweet onion bowls stuffed with a tomato, bacon, and topped with grilled and cubed pork tenderloin and topped with goat's milk Mozzarella.

Serves 4

4 - SWEET onions (vidella, mayan, even red)
6 - medium tomatoes seeds removed and diced
4 - Tbsp olive oil
1/4 cup chopped fresh basil
2 Tbsp thyme
1 Lb. pork tenderloin, sliced into 4 equal slices
5-6 strips of bacon, heavy smoked if you can find it.
1/2 to 3/4 cup of mozzarella cheese, grated
4 cloves of garlic, finely chopped
1 finely chopped, seeds removed, hot pepper (serano, chili, jalapeno)
Salt and Pepper to taste

Make a bowl out of the onions by finely slicing the tops and barely slicing the bottoms. Using a spoon or melon baller, scoop out the center until you have a bowl that will hold about 1/2 cup in volume.
Brush olive oil on the top rim of the onion bowl. Sprinkle salt and pepper on top.
Put on medium, indirect heat on the grill for about 15 minutes.

Take bacon and chop finely and lightly fry, you do not want the bacon crispy. Take out bacon from pan drain excess fat and cook tenderloin slices at medium-high heat until well browned. Cube browned pieces into 1/2" cubes.

In a bowl, combine the bacon, diced tomatoes, basil, hot pepper, salt and pepper and mix together.

Take bowls off the grill and put onto baking sheet or oven safe fry pan. brush oil into bottom of sheet or pan and place onion bowls apart from each other.

First put cubed tenderloin into the bottom of the bowl. Then add tomatoe and bacon mix on top until it is slightly heaped over the rim of each bowl. Take grated mozzarella and generously cover tops.

I usually broil the tops until the cheese is fully melted with spots begining to brown.

Hamburger Pie
1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3 med potatoes, peeled and quatered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings
