Beer+chicken=delima?

I have a whole chicken that I need to cook while it's still good and I also have a lot of beer in the fridge. I know you can make beer can chicken, in both the oven & on the grill, but I don't have a grill cause I live in an apartment complex, so I have to go to the courtyard to grill, and it's just not worth hassle, and the beers in bottles.

So what can I do with chicken and beer in the oven? I also plan to cook baby carrots, potatoes, the usual chicken side dishes.

1 lg. bottle barbecue sauce
1 (16 oz.) can beer
1 onion, sliced
1 bell pepper, sliced
1 chicken, cut up
Garlic salt to taste
Onion salt to taste

Place chicken in a baking dish, put onions and peppers in layers on top of chicken. In a bowl mix barbecue sauce, beer, garlic and onion salt to taste. Pour mixture over chicken. Cover with foil and bake at 350 degrees for 2 1/2 hours

If you have a left over vegetable or fruit can rinse it out and pour the beer in there. That way you can still do beer can chicken. Go ahead and do it in your oven works just as good as grill.

Just make sure you peel off label of can!

You could put all the ingredients in the same pot and put it in the oven on a low tempture like about 325-350 Let it simmer for a long time.

You can do "Beer in the Rear Chicken" in the oven.

My neighbor used to make the BEST beer chicken on his grill! it was spectacular. I watched him do it, and all he did was occasionally pour some beer over the chicken while it was cooking. I suppose you could probably do the same thing in the oven. Just baste it with beer!

Also- they sell those things at walmart. They are little metal things, like stands. You put the beer can in, and it not only holds the beer can in place, but you can cook your chicken upright, because it holds the chicken up too. pretty cheap, and in the section with all the dishes and such. I would think they would work in the oven as well as the grill.

Real easy, place your chicken in a baking pan, put about 1/4 cup of the beer inside and over your chicken. Put on your favorite spices. I would suggests a little salt and pepper rubbed all over and inside the chicken. Cover tightly in foil and bake for about 35 minutes in a 400 degree oven. Uncover and cook until the chicken is golden brown, or to the color you would like, (usually about 15 to 20 minutes more).

Here are a couple of recipes I have that are with beer:

Baked chicken with beer and seasonings.
INGREDIENTS:
? 6 slices bacon, diced
? 3 to 3 1/2 pounds chicken pieces, such as leg and thigh quarters
? 4 medium onions, thinly sliced
? 2 tablespoons flour
? 1/2 teaspoon ground marjoram
? 1/2 teaspoon black pepper
? 1/2 teaspoon leaf thyme
? 1 teaspoon salt
? 1 teaspoon sugar
? 1 clove garlic, minced
? 1 can (12 ounces) beer, room temperature
? 2 tablespoons cider vinegar

PREPARATION:
In an oven-safe Dutch oven or large saucepan, fry the bacon until crisp. Remove with slotted spoon to paper towels to drain. Over medium heat, brown chicken pieces in the bacon drippings, turning to brown all sides.

Remove to a platter as chicken browns.
Add onions to the pan and cook until tender, about 4 to 5 minutes. Drain off excess fat. Sprinkle on the flour, marjoram, pepper, thyme, salt, sugar, and garlic. Stir in beer. Cook over medium-high heat, stirring constantly, until thickened and bubbly. Stir in vinegar. Add chicken back to pot. Sprinkle with bacon. If necessary, transfer to a large baking dish. Cover and bake at 350° for 55 to 65 minutes, or until chicken is tender. Serves 6 to 8.


Chicken in Beer

Although it's about an hour's cooking time it is quick to prepare and you can pretty much leave it alone during the cooking time.
Serves 4:

1 chicken (a whole chicken works best, but you can use chicken pieces if you prefer, eg. thighs or drumsticks)
1 carrot, finely chopped
1 onion, finely chopped
1 leek, trimmed and finely chopped
1 celery stick, finely chopped
1 litre of beer (lager)
salt and pepper

Season the chicken cavity with salt and pepper and place in a large saucepan.
Add the vegetables and pour in the beer (pour slowly or the beer fizzes up and makes a mess of the cooker!). The beer should almost cover the chicken.
Bring to the boil, then lower the heat and simmer for about an hour until the beer has almost completely evaporated (it won't all evaporate if you use chicken pieces, so don't worry). The chicken should be tender and cooked through.


And for the beer can chicken being cooked in the oven I found this:

Spice Rubbed Beer Can Chicken

Spice Rub:
2 tablespoons garlic powder
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon paprika
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 teaspoon cayenne pepper
1/2 cup extra-virgin olive oil
1 lemon, zested
1 (3 1/2 to 4-pound) chicken
1 (12-ounce) can beer

Mix the ingredients for the Spice Rub until they are well blended. (This will keep, covered, in the refrigerator for 1 week.) Rub it all over the chicken, inside and out.
Open the beer and take a big swig or just pour out a couple of ounces. Sit the chicken on the beer can so the legs are at the bottom and the wings are at the top.

Note: This chicken can be cooked in a 350 degrees F oven. Just stand the beer can in a shallow roasting pan and cook about 1 hour or until juices run clear.
