How to make beef jerkey?


Answers:
Cut up the meat of your choice really thin. Best thing to do is marinate it over night, like in some Worcestershire Sauce or Liquid Smoke or whatever your into. Then put it in a food dehydrater.

You can get a great food dehydrator now for under $30 bucks.

If you don't want to go that route you can always use a smoker but you will have to watch it and make sure it doesn't get to dry or burned.

What I do is buy a good london broil and have the deli slice it thin. You add your spices and marinade to the meat and let it sit for a while in the fridge.

It doesn't take that long to marinade since it is cut thin. I use salt, garlic powder, onion powder and whatever you like. A good salty and sweet marinade is good. I have used that Lowrey's mesquite lime marinade and that tastes awesome.

Other things to use as marinade:
A1 sauce - I don't like it but some do
Lee and Perrins Worcestershire sauce - tastes great
Look at the Lowrey's marinades at the store
Liquid Smoke
Garlic Powder
Onion Powder
A little vinigar adds a tangy flavor
Soy Sauce

Everything you add will make it just that much more flavorful - I love jerky!

You lay the strips on the food dehydrator trays and let it dry away. If you start the dehydrator at about 9:00PM you can go to sleep and let it go until morning, but I find the trays near the bottom dry out faster than the top rack. So I start mine in the morning and then after about 6 hours I rotate the trays.

If you are doing it on an actual smoker use a smoke rack or make sure you spray non-stick oil on the rack so the slices of meat will not stick.

Be sure to buy liquid smoke - mesquite or hickory -if you are not using a smoker. It taste's a lot better than having no smoke flavor and it only takes about a teaspoon to flavor a whole batch.

You can use just about anything to marinade - for teriyaki try some Soy sauce mixed with pinapple juice along with garlic and maybe some salt.

My wife uses that liquid beef gravy base and adds a lot of garlic and onion powder. That makes a great "but salty" jerky.
