Question:

Side dish for French Dip sandwich?

I am wanting to have French Dip sandwiches for family dinner on Sunday and am looking for a great side dish to go with them other than french fries. I figure with all the bread on the sandwiches, that is enough carbs for the meal.


Answers:
I am partial to asparagus - oven roasted, drizzled with olive oil, topped with shaved parmesan cheese. An excellent accompaniment to any main course.

Tossed garden salad with all the trimmings. Blue cheese, walnuts, dried cranberries, sunflower seeds etc.

How about a nice homemade coleslaw? (You could even use Broccoli slaw mix if you are in the U.S. and can find it, it would up the nutrient content probably)

You could do one with mayonnaise if you like or one without.

Also, maybe a salad with a mustard vinaigrette as the mustard would complement the beef in the sandwich.

This is a nice and easy salad perfect as a side dish with sandwich. I'll put the recipe here:
ngredients:

* 4 large ripe Tomatoes, thickly sliced
* 500 g Mozzarella cheese, roughly chopped
* A handful of fresh Basil leaves
* A handful of Black/Green Olives, pitted
* 2 tbsp extra virgin Olive oil
* 2 tbsp Balsamic Vinegar
* Salt and Pepper

Method:

* Arrange the tomatoes ona plater, scatter over with cheese, olives and basil leaves.
* Drizzle with olive oil and Balsamic vinegar and season before serving.

When we have it I always made this to go with
COLD MACARONI SALAD

7 oz. pkg. cooked macaroni
1 1/2 c. cucumber, chopped
1 1/2 c. tomato, chopped
1/3 c. celery, chopped
1/3 c. green pepper, chopped
1/3 c. onions, chopped
Shrimp, tuna, ham, or chicken

DRESSING:

1 c. mayonnaise
1/2 c. Italian dressing
1 tbsp. mustard
Salt
Pepper
1 tbsp. dill weed

Mix, chill, and serve on a bed of lettuce. Use as side or main dish.

I would go with fruit. cold strawberry, or nectarine. I think everyone will be looking for the fries (but don't). The salty-sweet combo never fails, however, so the salty sandwich and cold, sweet fruit will do the trick.

COLD !
cherries, strawbs, nectarine, figi apple, red grape, kiwi fruit.

How about sauteed/carmelized onions and/or mushrooms? you can pile them on the sandwich before dipping.
Coleslaw
Broccolli salad (similar to coleslaw, just grated brocolli instead of cabbage,)
Waldorf salad (apples, walnuts and raisins) you can find a good dressing online.......or use mine:
4 large apples, peeled and cored, cut into small pieces (I like a tart apple...Granny Smith....but any firm apple will work)
1/4 C toasted chopped walnuts
1/2 C raisins
Dressing:
2 T mayo
1 t. apple cider vinegar or lemon juice
1 T honey OR 1/4 t. brown sugar
toss all together and let sit, covered in fridge for 1 hour or more) toss again before serving.
You can add/adjust to your taste......I like a very light, tangy dressing.......and more apple than anything.

Cucumber-Onion side dish/salad

You can make a marinade cucumber onion mix that tastes great and can be used in place of a regular salad.

Usually one big onion and two cucumbers work great, but you can get two onions just to make sure

Slice the onion into 1/4 inch sectional slices and pull apart. put in bowl. Skin the cucumber and slice it into thin 1/4 slices and put in bowl. Fill the bowl with water and add some salt. Let that sit for a little while.


Then drain the salt water

Next add an entire bottle of Apple Cider Vinegar

Add a little water to even the taste. If you like more of a vinegar taste don't add so much water, if you don't like the vinegar taste use more water.

Start with about 1/4 - 1/2 cup water - or just until the liquid reaches the top of the onions and cucumber mix.

Add some sugar - yes sugar - about 2 tablespoons to start. I use about 4 tablespoons of sugar. But add less if you like. Keep tasting the mixture until you get it the way you like it.

Let that sit and marinade for about 3 hours and you will have one really tasty and zappy salad like side dish.

I like to make this when I want to mix things up. People always get tired of the same old salad stuff, everyone who has tried this has really liked it.

Be careful on a date though - you might need an after dinner mint with all the onion - but it's sooooooooo good!

Broccoli Cheese Soup
1 bunch broccoli, about 1 1/4 pounds, washed and trimmed
2 cups sliced onions
5 tablespoons butter or margarine
7 cups chicken broth, divided
1 teaspoon dried leaf oregano, crumbled
1/4 cup flour
2 tablespoons Dijon mustard
1/8 teaspoon pepper
1 cup milk
2 cups shredded sharp Cheddar cheese
PREPARATION:
Cut florets off broccoli and divide into small sections. Simmer in lightly salted water for 2 minutes; drain and immerse in cold water to stop cooking then set aside.
Cut stalks into small pieces; place in a large saucepan. Add sliced onions and 3 tablespoons of butter to saucepan; sauté over medium low heat for 5 minutes. Add 3 cups chicken broth and oregano to the saucepan; simmer 20 to 30 minutes. Carefully process hot mixture in batches in a blender until smooth. Melt remaining 2 tablespoons butter in saucepan; stir in flour and cook, stirring constantly, until smooth and bubbly. Stir in mustard and pepper. Gradually stir in processed mixture and remaining 4 cups of chicken broth. Continue to cook, stirring, until mixture begins to bubble. Add milk and cheese; stir until smooth and cheese is melted. Add remaining broccoli florets and heat through. Broccoli cheese soup serves 8.
