Does anyone know how to make a dish called Pepper pot, I think this might be a carribean dish. I had eaten this few years back and like to have the recipe.

CARIBBEAN PEPPER POT
Makes 4 generous servings.
? 21/2to 3 lb. lean beef stew, preferably with bones
? 2 tbsp. coconut, peanut or corn oil
? 1 large onion, sliced
? 1 red or green bell pepper, cored and diced
? 3 cloves garlic, finely minced or crushed
? 1 tbsp. fresh chopped thyme or 11/2tsp. dried thyme
? 1 Scotch bonnet or Jamaican chile pepper, finely chopped, more if desired
? 2 to 3 tbsp. chopped parsley
? Freshly ground black pepper
? 11/2c. beer or water
? 11/2c. beef broth, or more if needed
? 2 tsp. salt, or to taste
?1/2lb. carrots, peeled and cut into 1-in. chunks
? 2 c. shredded kale, mustard or turnip greens
? 1 medium-size white potato, peeled and quartered
? 1 yellow or white turnip, peeled and quartered
Trim the beef of any excess fat and discard. Cut the meat into 2 or 3-inch pieces. Heat the oil in a large heavy pot or Dutch oven. Add the beef, a few pieces at a times, and brown on all sides, 4 to 5 minutes. (Remove from pan when browned to keep from crowding pan.)
Stir in the onion, bell pepper, garlic, thyme, chile pepper, parsley and black pepper. Sauté 3 or 4 minutes longer. Add the water or beer, the broth and the salt. Return beef to the pot. Bring to a boil. Reduce heat to low, cover the pot and cook about 45 minutes.
Add the carrots, greens, potato and turnip root. Cover and simmer over very low heat 11/2 hours longer or until the vegetables and meat are tender, stirring occasionally, adding more broth if needed.

Ingredients
250g callaloo or spinach
12 okras
12 cups water
1/2 pound pig's tail or salt beef
1/2 pound shin of beef
3 cups coconut milk
1/2 1b yello yam and coco, peeled and sliced
2 stalks spring onion, crushed
1 sliced hot pepper, seeds removed
black pepper
Preparation
Wash thoroughly and finely chop the callaloo and okras
Put them to poil in the water with the pig's tail or salt beef, and the shin of beef for 2 hours, or until the meats are tender.
Add the coconut milk, yam and coco, spring onions, hot pepper and black pepper.
Add more water if required, though the soup should be fairly thick.
Simmer for a further 30 minutes.
Serves 4 - 6
I remember this from an OLD cowboy movie (1950's)
the cow hands came to the bar-restaurant to eat
the dish was Pepper Pot.
it was explained that it was constantly kept cooking and always added to , , ,and pepper and chillies were added to cover the smell of the meat.

I was chatting with a lady from Guyana who told me that Pepper Pot
was a dish they made for Christmas morning (started earlier!) to be eaten with bread and fresh home-made ginger beer.....
she said they first started with water in which the boiled yucca and removedit for another use.....or they put rice in a cloth bag and boiled it up and saved the water ... then they put in ribs, some sugar, cinnamon, cloves, Scotch Bonnet pepper, salt,
orange peel, and I forgot what else....
I am sorry... that is as far as I can take it.... I hope it is of some use, anyway!!!

Jamaican Pepper Pot Soup:
10 servings
1 (10 ounce) package frozen okra, sliced
1 cup fresh spinach, chopped
1 cup green bell peppers, seeded, chopped
1/4 cup instant onion, minced
1 teaspoon salt
1/2 teaspoon thyme leaves, crushed
1/2 teaspoon marjoram, crushed
1/2 teaspoon rosemary, crushed
1/4 teaspoon instant garlic, minced
1 pinch red peppers, ground
6 cups chicken stock
2 lbs small shrimp, peeled, deveined (51-60)
1 cup cream of coconut, canned
10 lime slices
1. Combine okra, spinach, green pepper, minced onion, salt, thyme, marjoram, rosemary, minced garlic, red pepper and chicken stock in large stockpot. Heat to boiling.
2. Reduce heat; simmer, covered, 30 minutes.
3. Add shrimp and coconut milk.
4. Simmer until shrimp are cooked, about 5 minutes.
5. Serve garnished with lime slices.
