This is a good dish with salmon, hope u like it 2:
Ingredients:
* 200 g White Rice
* 15 g Butter
* 1 tbsp Olive oil
* 1/4 tsp Cumin
* 1/4 tsp Garam masala
* A pinch of Turmeric
* A pinch of Salt
* 350 ml Chicken/ Vegetable stock
* 1 small Onion, finely chopped
* 2 cloves Garlic, finely chopped
Method:
* Preheat the oven to 180 C/ Gas mark 4.
* Rinse rice under cold running water couple of times and leave ina bowl of cold water.
* Satue onions in oil and butter for 3 minutes, then add garlics and fry for another 2 minutes, add cumin, garam masala and turmeric to the onions and mix well.
* drain the rice and add to the onion mixture, stir well. Add the stock and salt if needed, cover and cook in the oven for 20 minutes.
* Check the rice tio make sure all the liquid has been absorbed, fluff with a fork.
* Serve on its own or with Greek yogurt.
OH SINCE IT IS SPRING/SUMMER...AD THEY ARE IN SEASON...GET FRESH ASPARAGUS AND STEAM THEM AND THEN GO AND BUY HOLLANDAISE SAUCE TO POUR OVER THEM...SO GOOD WITH SALMON...AND A SPRITZ OR GARNISH OF DILL AND/OR LEMON SLICE! AND A SALAD...

salmon is rich (and heavy) i think a wonderful salad with different greens and crusty bread grilled with butter and basil wound make a fine meal.
How about one of them being a nice salad, or a spinach salad, with feta, red onion, walnuts and strawberries, with a strawberry vinaigrette dressing. (puree some strawberries, add white wine vinegar, canola oil, some crushed tarragon and mix well). You could do a nice green veggie (steamed broccoli, the add to a little olive oil and fresh garlic in a fry pan, stir and serve. Or corn fritters and a tossed salad.
1 (16 ounce) can creamed corn
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
3 eggs
2 teaspoons vanilla
1/3 cup oil
2 cups milk
Mix together.
You may need a little more flour. Butter skillet well (or use a little oil) Brown on med. heat on both sides. Serve with a little applesauce and a tossed green salad.
Just had broiled salmon last night with friends. We had new potatoes pan fried (with seasoning) and steamed green beans. But also had a great recipe for a baja salsa to put on top of the salmon. Plus a nice white dinner wine. It was wonderful and I am not usually a salmon lover!
Salsa:
1 large navel orange, peeled and diced
1 small grapefruit, peeled and diced (we used ruby red)
1 medium tomato, seeded and diced
1/4 cup red onion (we didn't use)
1 small jalapeno, seeded and finely chopped
2 tbsp snipped fresh cilantro
2 tbsp red wine vinegar
1 tbsp vegetable oil
1/2 tsp lawry's seasoned salt (we used another brand - any brand you prefer will do)
1/4 tsp garlic powder
Refridgerate until chilled then spoon over cooked salmon.
The salmon was brushed with lemon juice before cooking.
This can be used for grilled or broiled salmon.

Grilled new potatoes and grilled asparagus.
Toss in a small amount of oil, with any seasoning you like.
Cut new (small) potatoes in 1/2 place skin side down on cooler side of grill, turn when browned. OR wrap in foil in single layer, put on hot side of grill, turn after 10 min, another 10 min, move to cooler side of grill.
Grilled asparagus.....pop of ends....peel bottoms if thick. Place 6-8 spears on 2 skewers (soak wooden skewers first), drizzle with some light oil, and grill 2 min on each side. Season with your favorite seasoned salt right after you pull them off.
If grilling this way.....make sure you have 2 skewers for each 6-8 spears......1 skewer at the top just under the head and another right about the bottom. This will keep them from falling though the grill.
A tastier way.........prepare asparagus spears as above, lay single layer on a sheet of aluminum foil, drizzle with good (not necessarily extra virgin) olive oil, a few thin slices of shallot AND fresh garlic, a little lemon zest, sprinkle course salt and pepper on top, toss gently, add a couple drops of fresh lemon juice, seal in foil, place on grill. Let cook 2-3 min, turn package, cook another 2 minutes.......take off grill, but do not unfold.
(Any good oil is great for this........but only a small drizzle...) (less than a T total)
