Please help with Prime Rib?
Anyone out there know how to prepare a 6 lb. Prime Rib and have it ready for dinner at eightish? No bone.
Answers:
Heat oven to 500 and when it is hot put the roast in for 6-8 min. a pound(for well) 4-6 min. for rare to med. Shut the oven off after that time and leave it in the oven for 2-3 hrs and DO NOT open the door. Check with a meat thermometer for doness. You'll love it.
The way I used to do it at the restaurant was to season it well, then roast at 375 for 2 hours (I did 13 pounders), then turn the heat down to 250 and roast overnight. I realize you don't have that much time, but just roast well, cover it if you have to, and turn the temp down a bit and wait wait wait.
season outside with salt, pepper and fresh horseradish oven at its highest setting without broiling bake for 25 minutes turn heat down to 375 and cook for another hour and a half or so.
135 for medium rare.
Not sure how much time that is given where you live but here is a recipe
INGREDIENTS
2 cups coarse kosher salt
6 pounds prime rib roast
1 tablespoon ground black pepper
1 tablespoon seasoning salt
DIRECTIONS
Preheat oven to 210 degrees F (100 degrees C).
Cover the bottom of a roasting pan with a layer of kosher salt. Place the roast, bone side down, on the salt. Season the meat with the ground black pepper and seasoning salt, then cover completely with kosher salt. Roast in preheated oven for 4 to 5 hours, or until the internal temperature of the meat reaches 145 degrees F (63 degrees C). Remove from oven and let rest for 30 minutes. This sets the juices and makes the roast easier to carve. (Note: Be sure to remove all the salt from the roast before serving.)
